Rancho Santa Fe Blue Cornmeal Muffins Makes 12 servings.  Prep Time: 5 min. Baking Time: 15 to 20 min.  Ingredients  1/4 - cup butter, melted 1/3 - cup maple syrup 1 - cup milk 1 - egg, beaten 1 - cup roasted blue cornmeal 1 - cup all-purpose flour 3 - teaspoons baking powder 1/4 - teaspoons salt  Directions  Preheat oven to 425° F. and grease muffin pan.   - Into a medium-mixing bowl, I add the butter, syrup, milk, and mix.   
 - In another bowl, I beat eggs until smooth.   
 - In another bowl, I sift together the cornmeal, flour, baking powder, and salt.   
 - I slowly add in the milk mixture.   
 - I spoon the batter into the muffin pan cups and fill the cup about 3/4-full.   
 - I place the muffin pan into the oven and bake 15 to 20 minutes or until lightly browned.
