1 lb. Sausage
1/2 bag Frozen Shredded Hash Browns
1/2 Onion, chopped
1/2 Green Pepper, chopped
6 - 8 eggs, scrambled
Salt and Pepper to taste
1 1/2 - 2 C. Shredded Sharp Cheddar or Mexican Cheese
In large skillet, brown sausage. Meanwhile, fry hash browns in oil in another skillet.
Remove sausage from skillet with slottedspoon to drain grease. Fry onions and green peppers in sausage drippings. Remove from skillet with slotted spoon. If there is still a lot of grease in skillet, drain most of it off.
Add eggs to skillet and cook in a tiny bit of the drippings. Turn and cut up large pieces until most of the moisture is gone. Add all other ingredients back in, including cheese. Mix well and cook until cheese is melted.
