Portuguese Chicken Piri Piri
150 ml (1/4 pint) olive oil
2 tbs lemon juice
2 tsp Chillies Crushed
1 tsp Garlic Salt
1/2 tsp Lemon Pepper
1/2 tsp Tarragon
1/2 tsp Basil
1/4 tsp Oregano
8 chicken drumsticks, skinned
Place the marinade ingredients in a bowl and mix together. Score the flesh of the chicken and pour over the marinade. Refrigerate for 2 hours or overnight.
Cook the chicken on the grill for 25-30 minutes, turning occasionally and basting with remaining marinade until thoroughly cooked.
Serve with a mixed salad.
