Crock Pot -- Gramma's Beef Stew
2 boneless beef top sirloin steaks (about 3 lb.), cut into 1/2" cubes 1/2 cup all purpose flour 4 slices bacon, diced 2 medium carrots, peeled and diced 8 small red potatoes, unpeeled, cut into quarters 8 to 10 mushrooms, sliced 20 to 24 pearl onions 3 cloves garlic, minced 1 bay leaf 1 tsp. Dried marjoram leaves 1/2 tsp. Dried thyme leaves 1/2 tsp. Salt Ground black pepper, to taste 2 TB quick cooking tapioca pearls, optional 2-1/2 cups Burgundy wine or beef broth
Coat beef cubes with flour, shaking off excess; set aside.
Sauté bacon in large skillet over medium heat until partially cooked. Add beef cubes and brown on all sides. Drain and discard fat.
Layer carrots, potatoes, mushrooms, onions, garlic, bay leaf, marjoram, Thyme, salt, pepper, and tapioca pearls to beef mixture in a crock pot/slow cooker. Pour wine over all.
Cover and cook on LOW heat setting for 8 to 9 hours or until beef is tender.
Remove and discard bay leaf before serving.
Yield: 10 to 12 servings.

I like your diabetic recipes. My husband got a new job a year ago and he had to take a physical. Thats when he found out he was diabetic. It didn't surprise me because his mothersister and one other brother who is going blind becasue of it, My hisband is a twin but the other twin doesn't have it or another brother. Anyway I need all the cooking help I can get because this is new to me. I try to follow his diet because its good for me also. Thanks for the help and zi hope you post more. I have several cookbooks for diabetics but I would rather have the recipe that someone I know tried it and liked it enough to post it. |
