Lemon and Thyme Lamb Chops

20 lamb chops
1/2 cup olive oil
1/4 cup lemon juice
1 tablespoon chopped fresh thyme
salt and pepper to taste

Stir together olive oil, lemon juice, thyme in a small bowl. Season with salt and pepper to taste. Brush over chops and marinate in the refrigerator for 1 hour. Preheat grill for high heat. Lightly oil grate and place lamb chops on grill. Cook for 10 minutes, turning once. Serves 8 to 10.

Lamb Loin Chops with Wine Sauce Recipe    4 Servings

Ingredients

  • 8 lamb chops, loin or rib

  • salt and pepper

  • olive oil

  • ¾ cup dry red zinfandel wine

  • 1 tablespoon balsamic vinegar

  • 1 shallot, minced

  • ¾ cut beef broth

  • 2 tablespoons red currant jelly

  • 2 tablespoons brandy

  • 2 tablespoons unsalted butter

Preparation

Heat olive oil in pan over medium-high.

Season lamb chops with salt and pepper.

Brown well on each side until desired doneness. Set aside.

Combine wine, balsamic vinegar and shallot in small non-aluminum saucepan and boil until reduced to 3 tablespoons.

In separate pan over high heat, reduce beef broth to ½ cup. Stir broth and jelly into the wine mixture.

Over moderately high heat, add brandy to the pan the lamb chops were cooked in.

Add wine mixture, bring to a simmer while stirring.

Remove from heat, swirl in butter and serve immediately

Parmesan Lamb Rib Chops Recipe

3 Servings

Ingredients

  • 6 lamb rib chops
  • 1 clove minced garlic
  • 1 tablespoon grated Parmesan cheese
  • 1/3 cup tomato sauce
  • 1 tablespoon chopped parsley
  • Dash oregano
  • Dash pepper

Preparation

In small skillet, sauté garlic in oil, stir in cheese, tomato sauce, parsley, oregano and pepper.  Spread thin layer over top side of chops.  Broil 3-4" from source of heat, 5-7 minutes; turn and brush second side; broil chops 5 minutes longer or until desired degree of doneness.

Broiled Lamb Chops over Spinach and Tomatoes

12 fresh lamb loin chops
1 teaspoon salt
1 teaspoon pepper
2 tablespoons shallots, finely chopped
1 1/4 cups dry vermouth
1 1/2 teaspoon olive oil
2 1/4 cups rich beef stock
4 quarts fresh spinach, stems removed
1 cup tomato, peeled, seeded and chopped
3/4 teaspoon dried thyme leaf

Season lamb chops with salt and pepper. Broil 3 1/2 to 4 1/4 minutes per side, remove from broiler and keep warm. Saute shallots in olive oil. Add the vermouth and beef stock, bring to a simmer and reduce by half. Add spinach, tomato and thyme and simmer until spinach is just wilted. To serve, divide spinach mixture evenly among 6 dinner plates, place 2 loin chops on top of spinach and spoon remaining sauce over top. Serves 6.

Grilled Lamb Loin Chops

Lamb Marinade

8 fresh lamb loin chops
1 head of garlic, peeled and crushed
2 shallots, peeled and sliced
4 ounces vegetable oil
1/2 tablespoon crushed black peppercorns

Relish

2 ripe mangos; peeled and diced into 1/4 inch pieces
1 tablespoon minced garlic
3 ounces toasted pine nuts, chopped fine
1 tablespoon fine diced shallots
20 leaves of mint, lightly chopped
1 1/2 ounces rice wine vinegar
1 tablespoon honey
salt and pepper to taste

Lay the lamb loin chops in a shallow dish covered in all the ingredients for the marinade. Let marinate for at least one day. When ready, clean off the lamb chops and barbecue till preferred doneness. For the relish, combine all the ingredients and let sit at room temperature for one hour prior to eating.

Honey Lamb Chops

2 tablespoons honey
2 tablespoons fresh lemon juice
2 tablespoons minced fresh rosemary
1 teaspoon Dijon mustard
1 teaspoon minced garlic
1 teaspoon onion powder
1/2 teaspoon dry mustard
6 5 ounce lamb chops, trimmed of fat
sprigs fresh mint for garnish

Combine all ingredients except the lamb chops and mint in a small bowl and microwave for 1 minute. Brush the mixture on the chops and broil or grill, turning frequently, according to the following guidelines: 12 minutes for rare, 15 minutes for medium and 18 minutes for well done. Garnish with mint and serve. Serves 6.

Lamb Chops with Cherry Pecan Sauce

4 lamb shoulder chops, cut 1/2 inch thick; about 1 1/2 pounds total
vegetable cooking spray
1 small onion, cut into thin wedges
1/2 cup pineapple juice
2 tablespoons. vinegar
1 tablespoon water
1 teaspoon cornstarch
1 teaspoon brown sugar
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper
1/4 cup dried tart red cherries
1/4 cup chopped pecans, toasted

Coat a large nonstick skillet with cooking spray. Add lamb. Cook over medium hot heat until lamb is brown on both sides. Add onion and pineapple juice. Cover and simmer for 10 to 15 minutes or until lamb is tender. Remove lamb. Skim fat from juices. In a small bowl stir together vinegar, water, cornstarch, brown sugar, salt, nutmeg and pepper. Add to juices in skillet. Cook and stir over medium heat until thickened and bubbly. Stir in cherries and pecans; heat through. Serve chops with cherry pecan sauce. Makes 4 servings.

Dijonaise Lamb Chops Recipe

Ingredients

  • 8 loin or rib lamb chops
  • ¼ cup Dijon mustard
  • 2 tablespoons Worcestershire sauce
  • ¼ cup seasoned bread crumbs

Preparation

Mix mustard and Worcestershire sauce. Place chops on broiling pan and brush with sauce. Sprinkle each chop with bread crumbs and broil 4 - 5 inches from the heat source for 5 minutes. Turn chops, repeat process and broil an additional 5 minutes or until desired doneness.

Italian Lamb Rib Chops Recipe

Ingredients

  • 8 American lamb rib chops
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • ½ cup tomato sauce
  • ¼ teaspoon oregano
  • ¼ teaspoon basil
  • 3 tablespoons parmesan cheese, grated
  • Dash of salt & pepper

Preparation

Heat olive oil in a small skillet and sauté the garlic. Stir in the remaining ingredients and simmer for 3 - 5 minutes. Spread a thin layer of the sauce on the top side of the lamb chops. Broil the chops 3 - 4 inches from the source of heat for 5 - 7 minutes. Turn and brush the sauce on the other side of chops. Broil 5 minutes longer or until desired doneness.

Lamb Loin Chops w/ Honey Mustard Recipe

2 Servings

Ingredients

  • 4 lamb loin chops
  • 1 clove garlic halved
  • 1 teaspoon dried rosemary
  • ¼ cup honey
  • 2 tablespoon coarse mustard
  • 1 lemon cut into wedges

Preparation

Turn on broiler.  Rub both sides of lamb chops with garlic.  Sprinkle with rosemary, salt and pepper to taste.  Press spices into lamb chops with hands.  Combine honey and mustard in a small bowl and set aside.  Arrange lamb chops on a lightly oiled broiling pan.  Brush with honey mustard.  Place pan 5" from heat source and broil 4-5 minutes.  Turn lamb chops and brush with honey mustard.  Broil another 4-5 minutes for medium.  Serve lamb with lemon wedges.

Pineapple Lamb Chops



4 Tbsp. orange juice

3 Tbsp. honey

1/2 tsp. salt

dash white pepper

4 boneless lamb loin chops

20 oz. can pineapple tidbits, drained

1 Tbsp. chopped fresh mint



Mix orange juice, honey, salt and pepper in small bowl. Place lamb chops on broiler pan. Brush with about a quarter of the orange juice mixture. Broil about 5" from heat about 5-6 minutes or until brown.



Turn, brush with more of the orange juice mixture and broil 6-9 minutes or until brown and desired doneness.

Meanwhile, in small saucepan, combine remaining orange juice mixture, pineapple and mint. Heat to boiling, stirring occasionally. Boil for 2 minutes and serve with the lamb chops.

LAMB CHOPS WITH MUSHROOMS AND HERBS



1 tbsp. minced garlic

1/3 c. minced fresh mint and parsley,

more or less half and half, or to

taste

4 tbsp. butter, at room temperature

6 thick loin lamb chops

6 thin lemon slices

6 sprigs of fresh mint

2-3 dozen firm white mushroom caps

(about 1 lb.)

Salt and freshly ground pepper to

taste



Preheat oven to 350 degrees. Mash garlic, herbs, and half the

butter together into a rough paste. Divide the herb among the lamb

chops. spreading a bit inside the tails and the rest on top.

Arrange each chop tightly on a piece of foil and place a lemon slice

and a mint sprig on top of each. Smear the remaining butter over the

mushrooms and arrange them evenly around each chop. Season to taste

with salt and freshly ground black pepper. Seal the foil packets,

and set on a baking sheet. Bake about 20 minutes for medium rare.

Transfer the packets to serving plates and allow guests to open them

at the table. Serves 3-6.

GRILLED LAMB CHOPS

SERVES 4

This is simple and delicious. The marinade can be used for chicken or pork.

INGREDIENTS

  • 4 thick lamb chops, trimmed of excess fat
  • Dijon mustard
  • Balsamic vinegar
  • Rosemary
  • Minced garlic
  • Olive oil
  • Salt and pepper to taste

Spread chops with a little of the mustard. Sprinkle with vinegar, seasonings and a little olive oil. Turn to rub in both sides. Let marinate about 30 minutes.

Meanwhile, heat the grill. Grill chops over high heat until done, about 4 minutes per side for medium-rare.
