STUFFED CINNAMON APPLES
6 apples
2/3 c. red cinnamon candies
2 c. water
3 oz. pkg. cream cheese
2 tbsp. milk
1 tsp. lemon juice
1/3 c. pitted dates, chopped
1 sm. can crushed pineapple, drained
2 tbsp. chopped walnuts
Lettuce

Peel and core apples, mix candies and water. Cook until candies are dissolved. Add apples. Simmer, uncovered until tender, about 15 minutes. Chill in syrup for several hours. Blend cream cheese, milk, lemon juice, dates, pineapple and nuts. Drain apples on rack. Place apples on top of salad greens. Stuff center of apples with cream cheese mixture. Very pretty and delicious

(Here are 3 salad winners)

 

Taffy Apple Salad

1st Place

 

4 cups         Red Delicious apples

1/2 cup      Sugar

8 oz.            Crushed pineapple, drained (save the juice)

1 Tbs           Flour

1              Egg

2 Tbs           Apple cider vinegar

8 oz              Cool Whip

1 cup           Virginia salted peanuts

 

Make a custard with the sugar, pineapple juice, flour, egg, and vinegar.  Cool well.  Fold in Cool Whip.  Peel and dice apples.  Fold apples and pineapple into custard mixture.  Just before serving fold in peanuts.  This recipe can be prepared a day ahead except for peanuts.

Store in refrigerator.

Snicker Apple Salad

 

2nd Place

 

Cake:

1 cup       Packed brown sugar

1 cup       Granulated sugar

1½ cup  Vegetable oil

3 Large eggs

3 cups     All-purpose flour

1 tsp.       Baking soda

2 tsp.       Cinnamon

1/4 tsp.   Allspice

1/2 tsp.   Salt

5               Medium apples, peeled and cut into inch-wide chunks (I mix sweet and tart apples.)

2 tsp.       Vanilla 

In a large bowl, combine sugars, oil and eggs.  Mix flour, soda, cinnamon, allspice and salt.  Sift over wet mixture. Toss in apples, nuts and vanilla.  Stir lightly until mixed.  Butter and flour a 9 x 13�?pan.  Pour in cake mixture.  (An angel food or Bundt pan also works.)  Bake in a pre-heated 375º oven for 50 minutes to one hour.  Cool for at least 15 minutes.

 

Glaze:

4 Tbs       Unsalted butter

1/4 cup  Granulated sugar

1/4 cup Heavy cream

1 big Pinch of salt

 

Melt butter and then mix in all the other ingredients.  Bring to boil and simmer for two to three minutes, stirring.

 

Assemble:

Make deep holes all over the cake with a wooden pick, chopstick, or thin knife and pour glaze over the cake.  Serve with ice cream, or whipped topping.  It’s good plain, too.

Trade Winds Salad

3rd Place

 

 

8 oz        package of macaroni

1 can      16-20 oz pineapple chunks or tidbits

2 cups    diced unpared apples

1/2 c      sliced maraschino cherries

1 cup     coarsely chopped nuts

 

Fluffy Cream Cheese Dressing

1 cup     cream whipped

2         3 oz. packages of cream cheese softened

3 Tbs     Sugar

 

 

Cook macaroni according to package directions.  Drain and blanch under cold water.  Chill.  To chilled macaroni add the pineapple, apples, cherries and nuts.

 

Blend cream cheese and sugar until fluffy, fold in whipped cream.  Fold this mixture into macaroni and chill.

Fruit Salad Vinaigrette

1 medium ripe mango
1 small papaya
2 kiwi fruit
1 star fruit

French Dressing:
2 tablespoons wine vinegar
1 teaspoon Dijon mustard
5 tablespoons olive oil
salt and pepper to taste

Cut the papaya in half and remove seeds. Peel papaya and mango, cut lengthways into slices. Peel and slice kiwi. Slice star fruit. Arrange the fruit attractively on a serving dish and pour a little dressing on top

French Dressing:
Place all the ingredients in a screw top jar and shake well to mix. Chill.

 Tropical Fruit Salad

2 cups seedless red grapes
1 cup cubed, peeled papaya
1 cup sliced star fruit
3 kiwi fruit, peeled and sliced
3 tablespoons lime juice
2 tablespoons honey
1 cup sliced banana

Combine grapes, papaya, star fruit and kiwi in a bowl; toss gently. Combine lime juice and honey in a small bowl, stirring with a whisk until blended. Pour over fruit; toss gently to coat. Cover and chill. Just before serving, add banana; toss gently. Makes 6 to 8 servings.

Avocado, Star Fruit and Wilted Spinach Salad

1 tablespoon peanut or corn oil
1 teaspoon ground cumin
2 tablespoons chopped red onion
1/3 cup Japanese rice wine vinegar
1 1/2 tablespoons brown sugar
1 teaspoon soy sauce
1/4 teaspoon red pepper flakes
1 pound fresh spinach, stemmed, washed and dried
2 star fruit, thinly sliced
1 avocado, peeled and sliced

In small, heavy skillet heat oil over medium heat, stir in cumin and cook for 30 seconds. Add onions and cook, stirring, until soft, about 2 minutes. Add vinegar, brown sugar, soy sauce and red pepper flakes, stirring to mix well. In large bowl toss spinach with 3 tablespoons of warm dressing. Divide among 4 plates, arrange star fruit and avocado slices over top and drizzle with remaining dressing.

Star Fruit Avocado Salad

torn lettuce leaves
2 tomatoes, sliced
1/2 red onion, sliced very thin
1 avocado, sliced
2 star fruit, sliced

On each of four salad plates, arrange a bed of lettuce. Layer the remaining ingredients in the order listed. Drizzle with lemon vinaigrette or your favorite dressing. Serves 4.

Autumn Fruit Salad Recipe

What a great fruit salad recipe! It combines crisp, fresh fruit with crunchy almonds (which are loaded with vitamin E and Magnesium).

Fragrant spices and creamy, calming yogurt mixed throughout�?and yum, what more could you want in a healthy salad that seems more like a treat then a side dish.

If desired raisins could be added as well as other nuts, such as walnuts and pecans.

Ingredients:

2 red delicious apples
1 sliced banana
1 Granny Smith apple
2 Bartlett pears
1/2 pound red grapes
1/2 cup almond slivers -- toasted
1 cup vanilla yogurt
1 teaspoon cinnamon
1/4 teaspoon ground ginger
1/2 teaspoon nutmeg
1 tablespoon apple cider

Directions:

1. Wash and core apples and pears, peeling if desired. Cut into one inch chunks.

2. Slice bananas 1/2" thick. Wash grapes and cut in half.

3. Combine fruits and almonds in salad bowl.

4. Mix yogurt with spices and cider. Pour over fruit salad and stir to coat fruits evenly. Chill.

Big Top Watermelon Salad



Ingredients



7 cups seeded cubed watermelon

1 cup crumbled feta

1/2 medium red onion, thinly sliced

1/3 cup pine nuts, toasted

1/2 cup packed arugula

1/3 cup chopped fresh parsley

1/4 cup chopped fresh mint

1/4 cup olive oil

2 tablespoons fresh lemon juice

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

Preparation

Combine first 7 ingredients in a large bowl.



Whisk together olive oil and remaining ingredients in a small bowl;

pour over salad, and toss well to combine.

Yield



Makes 8 servings

Apple Salad with Cabrales Cheese

Cabrales cheese (Spanish queso de Cabrales, Asturian quesu Cabrales) is

a natural cheese made in the artisan tradition by rural dairy farmers.



1 cup blanched whole almonds

7 medium garlic cloves

1/4 cup extra virgin olive oil

2 TB sherry vinegar

1 TB chopped shallot

Kosher salt and freshly ground pepper

3 large Granny Smith apples

2 TB chopped chives

5 oz. Cabrales cheese, crumbled



Preheat the oven to 350° F.



Spread the almonds on a small baking sheet and bake for 10 minutes, or until

lightly toasted. Transfer to a plate and let cool, then coarsely chop. 



In a small sauce pan, cook the garlic cloves in the olive oil over moderately

high heat

until golden, about 5 minutes. Remove from the heat and let cool. 



Transfer the garlic and oil to a blender. Add the vinegar and shallot, season

with

salt and pepper and blend until smooth. 



Halve and core the apples, then cut them into 1/4" matchsticks.



In a large bowl, toss the apples with the almonds, chives and dressing.



Top with the Cabrales cheese and serve.



Makes: 6 servings.

Pear Salad with Bleu Cheese Dressing



4 cups baby lettuce, washed

1 (18-ounce) can juice-packed pear halves, drained and cut into large dice

3 tablespoons apple cider vinegar

3 tablespoons olive oil

1 tablespoon honey

1/4 cup low fat sour cream

1/4 cup non-fat plain yogurt

3/4 cup crumbled bleu cheese

3 tablespoons walnuts

4 T bacon bits



Divide lettuce between 4 plates and top with pears.



In a medium mixing bowl, combine vinegar, oil, honey, sour cream and

yogurt. Fold in bleu cheese. Drizzle dressing over salad. Garnish each

plate with walnuts and bacon bits and serve.

Fruited Lettuce Salad

6 cups torn salad greens
1-11oz can mandarin oranges, drained
1 cup green grapes
1/4 cup finely chopped onion
3/4 cup sliced almonds
1/3 cup orange juice
1/3 cup vegetable oil
3 T vinegar
1-1/2 tsps celery seed

In a large bowl, toss the greens, oranges, grapes, onion and almonds. 
 
Combine remaining ingredients in a jar with tight-fitting lid; shake well. 
Pour over salad and toss to coat.

Serve immediately.

Serves 4-6

Cherry Pie Filling Salad

8 oz. Cream cheese

1 can (14 oz.) sweetened condensed milk

1/3 c Sue Bee Honey

1 Container (8 oz.) whipped topping

1 can Cherry pie filling

1 can (8 oz.) crushed pineapple drained

Beat cream cheese, condensed milk and Sue Bee Honey until smooth. Stir in whipped topping, cherry pie filling and pineapple. Refrigerate overnight.

Serves 4.

Cherry Applesauce Salad
1 pkg. cherry Jell-O
1 c. hot water
1/4 c. red cinnamon candy
1/2 c. boiling water
1 c. apples, chopped, pared
1 c. celery, chopped
1/2 c. nuts, chopped

Dissolve Jell-O in hot water; add candies to 1/2 cup boiling water. Add enough water to make 1 cup; add to dissolved Jell-O. Cool until partially set; add remaining ingredients. Chill and mold.

Stuffed Peach Halves

Mix together:
1 8 oz cream cheese (room temp)
2 tbsp powdered sugar
1/2 cup chopped pecans
3 tbsp sour cream

Drain and dry canned peach halves very well.

Place a leafy designer lettuce (butter lettuce, arugala, frizee', red tipped lettuce....etc) on a plate and top with the drained and dried peach halves (well side up). Add a dollop of the cream cheese mix into the well of the peach. Top with a few more chopped pecans and a maraschino cherry half.

Can also be done with fresh peaches but fresh peaches must be immersed in an acidic solution of lemon juice so they do not turn brown before serving. I prefer canned peaches for presentation.

Honey Walnut Fruit Salad



1/3 cup Honey

1/2 cup Mayonnaise (may use low-fat)

1/2 cup walnuts, chopped

3 unpeeled apples, cored and chopped

2 bananas, peeled and sliced

10-11 ounces canned Mandarin oranges, drained

1 cup seedless grapes

1 cup shredded lettuce (I omit)

1 teaspoon lemon zest

1 tablespoo lemon juice



Blend honey and mayonnaise until smooth. Toss

remaining ingredients with lemon juice and zest. Stir

in the honey mixture and refrigerate until ready to

serve.



7 one cup servings.
