2 tbs. butter
2 tbs. flour
1 c. milk
1/4 tsp. salt
4-6 boiled egss--chopped
English muffins/toast
paprika
Melt butter, blend in flour and salt slowly
Add milk. Cook quickly and stir constantly until thickened and bubbly.
Add chopped eggs and pour over English muffins or toast; sprinkle with paprika.
Serve with sausage/bacon/ham and fruit.
This can be made at night and reheated in the morning--just add a bit of milk to thin it if needed.
ETA: You might want to experiment with sprinkling cheese on top of the goop after it's been poured over the muffins/toast.
