this is perfect for the summer with all the veggies in season!!
4-5 med zucchini cooked and cubed (sometimes I use green and yellow to mix it up a bit)
1/4-1/2 cup shredded carrots
1/2 cup chopped onion
6 tbs butter
1 can cream of chicken soup
1/2 cup sour cream
2 1/4 cups seasoned croutons
saute carrots and onions in butter. stir in soup, scour cream and croutons. fold in zuccini and put in butter casserole. bake at 350 for about 30-40 minutes
