Honey Cakes
Little fried cakes, dipped in honey and nutmeg. A delightful sweet Imbolc treat.
INGREDIENTS:
1/2 cup Riesling wine
1 egg
2/3 cup flour
1 cup honey
2 tbs sugar
1/8 tsp cinnamon
1/8 tsp nutmeg
Dash of salt
PREPARATION:
Beat the egg together with the wine. In another mixing bowl, sift together the flour, cinnamon, sugar and salt. Add the flour mixture to the egg mixture. Stir until blended through. Let sit for 30 minutes.
In another small bowl, mix the honey and nutmeg. In a frying pan, heat up about a 1/2 inch of oil. Drop a tablespoon of batter into the oil and fry until golden brown. Drain off the oil, and dip into the honey mixture.
