Monday - chicken quesidillias of club sandwiches (dh choice & using up sat. leftover chicken)
Tues: Mac & cheese, salad
Wed: Pork roast or Ribs, potatoes, salad
Thurs: dinner out a Chicken Chalet
Fri & Sat??????????????????

D:Italian Turkey Meatloaf, Pasta, steamed broccoli, baked butternut squash
 
Thursday - B:Oatmeal and raisins, milk, honey
L:chicken rice soup, sliced tomato salad
D: Red beans and rice, green salad
 
Friday - B:French toast and applebutter
L:peanut butter and jelly on pancake (raisin), applesauce

LOL - hit the send button too soon. 
 
And after I finish preparing - and before I eat - I divide out the meal into portions and freeze whatever I can - single servings - for lunches or future meals (some of this week's were future meals!)

So of COURSE my menu is changing. 
 
  • Sunday:  Porkchops (Thanks Serene for your 10 min prep idea) roast potatoes, tomato & celery salad Went as planned
  • Monday - chicken quesidillias or club sandwiches (dh choice & using up sat. leftover chicken) Change of plans:Dh wanted chicken salad sandwiches for lunch, so we ate up al the leftover chicken. (My goal, anyways) For dinner we had Italian sausages on a bun, fries & celery with tomato salad.
  • Tues: Mac & cheese, saladChanging plans - still going for pasta, but spaghetti with meat sauce,& bacon cheese toast
  • Wed: Pork roast or Ribs, potatoes, salad Changing plans -dh will not be home for dinner on wed, so using up leftover ground beef for quesidillias
  • Thurs: dinner out a Chicken Chalet
  • Fri & Sat??????????????????

Well only 1 meal went as planned, but I had everything (except for sausage buns) in the house.

Just updating what we are actually having nightly, lol.  Big switcharoos.
Planned meal/ What we actually ate,lol

  • Thurs: dinner out a Chicken Chalet- cancelled - pork roast, potatoes, tomato salad
  • Fri & Sat?????????????????? Not sure if dh will be home this wknd.  Waiting on his plans.

Just posting last weeks menu for future use:
 
Sun- baked chicken breasts (new recipe),potato, salad, bread
Mon- Italian sausage on buns, salad, fries
Tues - Roast beef, potato,salad, bread
Wed- Beef Stroganoff & salad (leftover roast beef)
Thurs- Ribs & salad, bread
Friday - Mcdonalds-DH choice & treat
Sat: not sure, $5 pizza or crockpot?????????? no dh today, just me & ss
 
Next week?????????
Have lottsa chicken & sausage in freezer, prolly  a pasta night too.

Woah! Now thats a menu!! Good job Helen.
 
Tonight we had individual stuffed turkey loaf (meatloaf w/ stuffing inside)
and creamed spinach
 
Tomorrow - hmmm....soup?? Not sure...maybe something with chicken....
Wednesday - Porkchops
Thursday - eat out
Friday - maybe Manwich and fries
Saturday - Minestrone or some other soup
Sunday - leftovers

Helen, ur still my menu goddess.  Geesh you have a bigger variety of items than some restaurant menus. 
This sounds delish:  turkey and artichoke casserole
 
GJ to you Lynn, and that turkey loaf sounds yum on!
 
Do you 2 mind handing out the recipes?
 
My menu's for this week:
Sunday- potato & hamburger casserole - first & last time using that recipe. It STUNK.lol
Monday- takeout pizza (found a place that has $5 meds.)
Tue: Pork roast, potatoes, veggie salad, bread
Wed & thurs nights: One night breaded chicken breasts, potato & salad, the other night pasta.
Fri & Sat nights: One night takeout, the other night?????????????

That turkey loaf DOES sound delicious!!!  Would love to have recipe!
 
LOL re MY recipes - re evening (and Saturday noon) meals - they come straight out of the Saving Dinner Cookbook by Leanne!  Even hasll the go with's for each recipe!  Now that is for the evening meal.  Breakfast I keep a general menu meal - 2 x a week - egg something, twice a week cereal something, twice a week a baked something and on Sat - something special.
 
Lunch I HOPE is something light - sandwich, soup, salad of some sort.  And may go to Cindy's porch for further suggestions!
 
Then I count number of meals with dairy (3 a day), veggies (2 - 3 a  day), fruit - HOPEFULLY 2 a day, protein sources - at least 1 a day, maybe grains - supposedly up to 5 a day BUT I would rather keep it around 3 if possible which I generally ignore anyway.
 
Takes longer than 15 minutes - but not a lot longer. and that only because I invariably sidetrack and read through the item!

oh yeah - turkey and artichoke casserole - it SAYS chicken and artichoke casserole - but turkey-chicken - who cares!  Just think of it as a bigger Big bird!
