As part of my diabetes management I rely on using carb sources that are high in fiber, low on the glycemic index and that therefore tend to be converted into blood sugars more slowly than highly processed, high GI carbs.
My breakfast staple now for the past year has been a bread that I discovered and which is called Leinsammen Roggenbrot. It is made from whole rye and flax seeds. Each slice has 23 grams of carbs but 3 of those grams are fiber so the real carb load is 20 grams.
I live in Canada and buy it from my local Real Canadian Superstore. However, there is a website that takes online orders for shipping anywhere in North America: http://erikasonlinestore.com/leinrogslic1.html
For someone who has a good artisan bakery close by, or maybe access to a place like Trader Joe's, then buying something locally would be a better option. But if you live in a place where there is one general store and the choices are white sliced or white unsliced, then that website might be an option.
Tor

Thanks for the info Tor! I don't have a credit card so buying things on the net is hard.
I just got Joe some Jewish rye and it says it has 16 grams of carbs in it. He likes it and had some for toast this morning with a boiled egg. Hope he can do this.
Again thanks Tor!
Tammie

Hello Everyone
The lowest carb bread I have found is Healthy Life.  It's 9 g of carbs per slice.  I live in the Midwest.  I'm always looking for something lower.

I prefer dark breads and especially caraway rye, but sometimes I crave white, and have found Wonder Bread in Minneapolis, MN makes Wonder Light, and at two slices per serving, a serving offers total fat 0.5 g, (0 sat/0 poly/0 mono), 260 mg salt, 19 g carb (1 gr sugar), 4 gr protein, and 5 gr fiber, so that's l4 g carbs!  I've spent a lot of time in bread aisles trying not to squeeze packages out of shape.  I was really suprized to learn that all those breads with the grain & seeds sprinkled on top, and even whole wheat is high in carbs with very little fiber.  Just thought I'd pass that along for those who may get Wonder brand bread in their area

I have had the wonder bread light. But I have to shop around for it!
They don't have it at all the places.
Somewhere I read that Rye bread is high on GI.
And that Sourdough is lower on GI.
Just wondering if anyone hear of that, because I see alot of Rye bread buyers.
Wonder Bread has a great sourdough lite bread.
I see why they call it lite, because the slices are small....
I have also heard of Ezekiel bread that is supposed to be all natural and good for you. Because even those 100% whole wheat bread, are still processed with enriched flour and brown sugar! eek!! or honey and such. Which I could imagine would spike

Andrea,
When I eat bread, which is very rare anymore, I eat the Ezekiel 4:9 bread.  It is a sprouted grain bread, very low in carbs and has no wheat in it.  It is a very dense bread, which I prefer anyway.  I am not crazy about the plain it's just too dry and disinteresting, but I do really like the sesame seed one.  Just my 2 cents.
Mike

Roman Meal light wheat. 20 carbs, 5 grams of fiber = 15 carbs in 2 slices. Tastes great two, better than wonder light.

Also, check out La Tortilla factory (www.latortillafactory.com ) with 3 carb 9" wheat tortilla. An excellent replacement for bread.

Here in California, we can get Alvarado Street breads.  They are made from sprouted grains rather than flours..... several styles have multi-grains.  Very low in calories, very low in carbs, organically grown.  It is in supermarkets as well as health food stores.
