Pumpkin Piñon Bread
Makes 2 loaves.
 Prep Time: 10 min.
Baking Time: 1 hr.
 Ingredients
 1-3/4 - cups cooked pumpkin
1-1/2 - cups light brown sugar (packed)
1/2 - cup butter, melted
3 - eggs, lightly beaten
3 - cups flour
2 - teaspoons baking powder
1 - teaspoons cinnamon
1/2 - teaspoons nutmeg
1/2 tsp. salt
1 - cups roasted shelled Piñon Nuts
 Directions
 Preheat oven to 350º F.
  - Sift flour, baking powder and spices, stir in nuts.   
 - Mix other ingredients, and add flour mixture, blending thoroughly.   
 - Pour batter into two-oiled loaf pans and bake for 1 hour or until the bread tests done.   
 - Cool on rack.
