Candied Yams or Sweet Potatoes

Serves:  4

Ingredients:

2 cups yams or sweet potatoes, boiled and skinned
3 tablespoons butter
1/2-teaspoon salt
1/4-cup hot milk
1/4-cup maple syrup
1/4-cup brown sugar
1/4-cup pecans

Procedure:

  1. Place potatoes in a large bowl and mash them.
  2. Add butter, salt, milk and maple syrup.
  3. Beat or whisk mixture until light and fluffy.
  4. Place potatoes in a shallow glass baking dish.
  5. Sprinkle with brown sugar and pecans.
  6. Bake uncovered for 20 minutes at 375 F. Serve hot.

Total Prep Time: 45 minutes

Tips & Timing: This dish can be prepared ahead of time and cooked or heated later. If you don't have maple syrup, replace it with brown sugar. Additionally, walnuts can be substituted.
