 tried this salad and it is so good and low fat..and EASY! thought I would
spread the word.  one of the dishes the fam asks for in the summer
 

1/3 cup balsamic vinegar

1 Tbs. dijon dijon mustard

1/4 tsp seasoned salt

1/4 tsp sugar

1/8 fresh ground black pepper

 

12oz boneless, skinless chicken breast halves

1lb sweet onion cut into pieces

8 cups mixed baby salad greens (about a 6oz bag)

2 cups of seedless grapes...(you can use red or green or both)

2 Tbs thinly sliced fresh basil

 

preheat your grill to medium high.

whisk to gether first 5 ingredients until smooth.  pour 2 tbs dressing
into a cup and brush over chicken an onion.  Let chicken & onion stand
for about 5 minutes.  grill chicken about 12-15 minutes until done...only
turning once.  grill onion for 3-5 minutes on each side until soft. 
toss together salad greens, grapes, basil and remaining dressing until
coated.  transfer to a platter.  place cut up pieces of chicken and
onion on top of greens.

 

makes 4 servings...
