This is my mom's fave recipe and so she sent it to me.
COFFEE APPLE CAKE
Pre-Heat Oven at 375 degrees
3 medium apples, Slice Apples and soak them in salt water.
You will need a 9" squarepan or loaf pan----Greased and Floured
Step 1) Mix Thourghly in a bowl:
1/4 cup of soft shortenting
1 Egg
3/4 cup of sugar
Step 2 ) Stir in 1/2 cup of Milk
Step 3) Have this ready in separate bowl before stirring in the milk!
Sift together and stir in:
11/2 cups of Flour
2 tsp. of Baking Powder
1/2 tsp. Salt
Then add after the Milk is poured
Step 4 ) (Remember you will be layering the apples on to the Batter) so pour and spread your batter in to the pan and then start to lay your apple slices on top of the batter then re-
peat by pouring the batter over the apples slices and begin with more apple slices until you are finished.
Step 5 ) After you are layering, next is adding the topping which is:
In a small bowl mix together: 1/2 cup of brown sugar and 11/2 tsp. of cinnamon.
Sprinkle by hand on top of batter then pop it into the oven of 375 degrees
Bake for 25 to 35 minutes, use a wooden toothpick to test if it is done make
sure to insert it in the middle of the cake, when it comes out clean it is done.
Note: if baking the cake in the square pan it yields or makes 9--3" squares.
Serve warm with Hot Coffee and you can add whip cream or ice cream to the cake.
