I made this last night, and it turned out great! ;o)
Ingredients:
Half a box of Mini Lasagna noodles (I used Creamette...I think it was a 16 oz box)
One taco seasoning packet
1 pound ground beef (or one package of "vegetarian ground round" for veggie version [which is what I made])
1-1/2 cup hot water
1 cup cottage cheese
1/4 cup grated parmesean cheese
1 tomato (cut into wedges)
sliced green olives
shredded mozzerella cheese
Cook the noodles as directed on the package and drain. Brown the beef, or heat the veggie stuff, then stir in the taco seasoning with the water...bring this to a boil, then reduce heat to simmer for 10-15 minutes. Remove the seasoned meat/veggie stuff from heat and stir in the cottage cheese, grated paresean, and noodles. Spoon this out onto serving plates and top with shredded mozzerella. Garnish with tomato wedges and green olive slices.
