Super Soup
This soup is fantastic for the cold months. Its packed with vitamins, has very little fat and detoxifies your system. The vegetables combine to make a sweet and tasty broth, while the tpmatoes give the meat a rich, tender flavor and the cabbage lends substance to the soup in for a 'stick to the ribs' kind of winter meal.
Ingredients:
1 small cabbage (shredded or chopped)
1 large can stewed tomatoes
1 onion (sliced or chopped)
6 large carrots (sliced)
6 large potatoes (diced)
2 cups of yellow beans (chopped) or 1 can
2 or 3 large pork chops (chopped)
water or tomatoe juice is added as needed.
- Lightly brown the meat in the cooking pot with onions, using medium heat.
- Add large can of tomatoes and about 2 inches of water or tomatoe juice (I use V8 juice).
- Add carrots and cabbage, salt & pepper ... cover and simmer on low heat for an hour. Stir regularly.
- Add potatoes and beans, cover and simmer for another 30 - 40 minutes until potatoes are tender.
- Add water as required to adjust consistency.
Serve with crusty buns or french bread.
This soup freezes well if the potatoes are removed prior to freezing. Left over potatoes make a tasty side dish or great hashbrowns for breakfast.
