Chocolate Covered Banana Pops

Serves:  8

Ingredients:

4 bananas  
1/2 cup heavy cream  
1 cup semi-sweet chocolate chips  
1/2 cup chopped peanuts  

Procedure:

Peel the bananas and cut in half across to get 2 short  
pieces of banana. Insert a Popsicle stick into each banana  
half for a handle. Wrap each banana half in a piece of  
aluminum foil and place in the freezer for at least 4 to  
6 hours until frozen solid. Place the cream in a small  
saucepan and bring to a gentle simmer over medium heat.  
Remove from the heat. Place the chocolate chips in a medium  
bowl, then carefully pour the hot cream over the chips.  
Let the chocolate and cream sit for a minute or two, then  
stir with a small spoon until blended and chocolate is  
completely melted. Remove the bananas from the freezer  
and unwrap. Cover a small baking sheet with wax paper or  
aluminum foil. Holding the stick, dip one banana half in  
the melted chocolate until completely coated. Sprinkle the  
coated banana with about 1 tablespoon of the nuts and set  
the banana on the covered baking sheet. Repeat with the  
remaining bananas. Serve immediately, or place in the  
freezer until ready to serve.
