CHEESE & SPINACH PUFFS  

1 (10 oz.) pkg. frozen chopped spinach
1/2 c. chopped onion
2 slightly beaten eggs
1/2 c. grated Parmesan cheese
1/2 c. shredded cheddar cheese
1/3 c. blue cheese salad dressing
2 tbsp. butter, melted
1/8 tsp. garlic powder
1 (8 1/2 oz.) pkg. corn muffin mix
Dijon-style mustard (opt.)

Cook spinach and onion according to package directions. Drain well,
pressing out excess liquid. In a bowl combine eggs, cheeses, salad
dressing, butter and garlic powder. Stir in spinach and muffin mix.
Cover; chill 1 hour or until easy to handle.

Shape into 1 inch balls, arrange on a baking sheet. Cover, chill until
serving time. (Or, place in a freezer container; seal, label and freeze.)

To serve, place puffs on baking sheet. Bake in 350 degree oven for 10
to 12 minutes for chilled puffs or 12 to 15 minutes for frozen puffs
or until light brown. Serve warm with mustard. Makes 50.

HOT OLIVE CHEESE PUFFS  

1 c. grated sharp cheese
3 tbsp. soft butter
1/2 c. sifted flour
1/4 tsp. salt
1/2 tsp. paprika
24 sm. stuffed olives, well drained

With electric mixer, cream the cream cheese and butter. Stir in sifted
dry ingredients. Mix well. Wrap 1 teaspoon cheese dough around each
stuffed olive, completely covering. Place wrapped olives on heavy
sheet of cardboard and wrap securely for freezing. Freeze. To serve,
unwrap desired number of frozen puffs. Arrange on ungreased cookie
sheet. Bake in 400 degree oven 10 to 15 minutes or until brown. Serve
warm, makes about 24 puffs.

Pizza Roll-Ups --sonja


1 loaf frozen French bread dough or italian bread dough or all
purpose bread dough
1 lb lean ground beef or turkey
1 teaspoon salt
1/2 teaspoon pepper
2 cups grated part-skim mozzarella cheese
1 teaspoon Italian herb seasoning
1 tablespoon fresh parsley, chopped
4 cups italian tomato sauce

   1. Thaw dough; roll it into 14 X 24" rectangle about 1/4" thick.
   2. Brown ground beef or turkey; stir in remaining ingredients
except Italian Tomato Sauce.
   3. Spoon filling evenly onto dough, slightly pressing filling into
dough.
   4. Roll dough lenghwise like a jelly roll, and cut into 24 1"
slices.
   5. Treat 2 rimmed cookie sheets with nonstick spray; lay slices on
sheets about 1" apart.
   6. Preheat oven to 400F.
   7. Let roll-ups sit for 10 minutes.
   8. Bake for 20-25 minutes or until golden.
   9. Cool roll-ups and freeze in 4 1 gallon bags, 6 per bag.
  10. Slip a 1 qt bag with 1 cup sauce into each bag of pizza roll ups.
  11. To prepare, thaw roll-ups and warm them in a preheated 400F oven
for 10 minutes or put them frozen in the microwave; heat on high for
about 2 minutes.

Serve with favorite tomato or pizza sauce.

Tuna Melt-Aways---Dutchie
 
2 cups shredded Cheddar cheese  
1/2 cup celery,finely chopped  
1/2 cup onion,finely chopped  
1/2 cup carrot,shredded  
1 can  (12 oz.) Starkist solid white tuna in spring water,drained,chunked  
2 tablespoons light mayonnaise  
Dash hot pepper sauce,if desired  
6 English muffins,split 
 
Heat broiler. In medium bowl combine all ingredients except muffins; mix well. Divide tuna mixture evenly onto muffin halves. Place on broiler pan; broil 4 to 6 inches from heat for 6 to 8 minutes or until lightly browned and bubbly. Serve warm. To serve as appetizers, cut each broiled muffin into quarters. 

Tuna Meltaways can be frozen for later use. Before broiling, place on baking sheet; freeze until solid. Place in storage container. Tuna Meltaways can be broiled frozen. Increase broiling time to 8 to 10 minutes.

Mushroom Rolls

1 pkg. cream cheese (3 oz)
3 oz. chopped mushrooms
1 pkg. crescent rolls

Roll out rolls, but don't separate. Spread mixture onto dough, separate, roll
up and cut into thirds. I freeze on a cookie sheet. Once frozen, place in a
freezer bag and use as needed. Bake at 350 about 20 minutes.

1 (1 lb.) pkg. Velveeta cheese (Mexican for spicy)

Cook together; drain well. Add: Once melted, place by the spoonful on top of Pepperidge Farm mini pumpernickel bread. Place on cookie sheet and put in freezer for 10 minutes. Toss into plastic Ziploc baggie. To serve, place on cookie sheet and bake at 350 degrees for 15 minutes. Great for preparing ahead of time!!

1 Lb Hot Pork Sausage
16 Oz. Shredded Sharp Cheddar Cheese
3 C. Bisquick

Let Sausage and Cheese get room temperature. Mix well. Form into
walnut sized balls.  Bake on cookie sheet for 15 - 20 minutes
(until brown).  Serve warm.  NOTE:  These can be made ahead of
time and frozen.  Take out what you need and bake as needed.

Peanut Butter Snack Cups



12 vanilla wafers

1 (8 oz) carton whipped topping thawed, divided

1 C. cold milk

1/2 C. peanut butter

1 (3.9 oz) pkg. instant chocolate pudding mix



Place wafers in paper or foil lined muffin cups. Top each with 1 T. whipped topping. In a mixing bowl combine milk, and peanut butter. Add pudding mix; beat on low speed for 2 minutes. Fold in remaining whipped topping. Spoon into prepared cups. Cover and freeze. Remove from the freezer 10 minutes before serving.

Start to Finish:45 min



Makes:7 1/2 dozen appetizers



3 cups Original Bisquick® mix

1 pound bulk pork sausage

4 cups shredded Cheddar cheese (16 ounces)

1/2 cup grated Parmesan cheese

1/2 cup milk

1/2 teaspoon dried rosemary leaves

1/2 teaspoon parsley flakes

Barbecue sauce or chili sauce, if desired



1.

Heat oven to 350ºF. Lightly grease bottom and sides of jelly roll pan, 15

1/2x10 1/2x2x1 inch.

2.

Stir together all ingredients, using hands or spoon. Shape mixture into

1-inch balls. Place in pan.

3.

Bake 20 to 25 minutes or until brown. Immediately remove from pan. Serve

warm with sauce for dipping.

High Altitude (3500-6500 ft) Heat oven to 375ºF. Decrease Bisquick to 2 1/2

cups; stir in 1/2 cup Gold Medal® all-purpose flour. Bake 25 to 30 minutes.

Make-Ahead Chicken Wontons

1/2 lb. ground chicken
1/2 c.  shredded carrots
1/4 c. finely chopped celery
1 tbsp. soy sauce
1 tbsp.  dry sherry
2 tsp. cornstarch
2 tsp. grated ginger root
1/2 of (16 oz.)  pkg. wonton wrappers
2 tbsp. butter, melted
In skillet, cook and stir meat  until no longer pink; drain. Stir in carrot,
celery, soy sauce, sherry,  cornstarch, and ginger root; mix well. Spoon 1
rounded teaspoon of the filling  on wonton wrapper. Lightly brush edges with
water. 
To shape each wonton, carefully bring 2 opposite points  of the square
wrapper up over the filling and pinch together in the center.  Carefully bring
the 2
remaining opposite points to the center and pinch  together. Pinch together
edges to seal. Place wontons on a greased baking sheet.  Brush with melted
butter. Bake in 375 degree oven 8-10 minutes. Make ahead and  freeze.

Chili-Cheese Wontons with Cilantro Sauce
 
Makes 25  appetizers.
3/4 c. V8 vegetable juice
2  tbsp. chopped fresh cilantro or parsley
2 tbsp. chopped green onion
1  tbsp. vegetable oil
1/2 c. chopped onion
1/3 c. chopped sweet red  pepper
2 tsp. chili powder
1 can (4 oz.) chopped green chilies
1 c.  shredded Monterey Jack cheese (4 oz.)
25 wonton wrappers
Oil for deep-fat  frying
1. To make sauce: In small bowl,  stir together V8 juice, cilantro and green
onion; set aside. 
2. To make filling: In 8-inch skillet over medium heat,  in 1 tablespoon hot
oil, cook onion and red pepper with chili powder until onion  is tender,
stirring occasionally. Remove from heat; cool slightly. Stir in  chilies and
cheese. 
3. Keep wonton wrappers covered with plastic wrap until  ready to fill. Spoon
about 1 1/2 teaspoons filling in center of each wonton  wrapper. Moisten
edges with water; fold diagonally in half. Pinch edges to seal.  Cover filled
wontons with plastic wrap while working with remaining wonton  wrappers. 
4. In large saucepan over medium-high heat, heat 1 1/2  inches oil to 350
degrees F. Adjust heat to maintain temperature. Cook wontons,  4 at a time, 1 to
2 minutes or until golden brown on both sides. Remove to paper  towels to
drain. 
5. Serve warm with sauce for dipping. 
Note: Fried wontons can be frozen. To reheat, preheat  oven to 350 degrees F.
Place wontons on cookie sheet; bake 15 minutes or until  crisp.

Meat Bread

    1 pkg frozen bread dough (3 per pack)
    1 lb extra lean ground beef
    1 roll sausage (hot or mild)
    One 16 oz pkg. smoked sausage (hot or mild)
    8 oz grated Mozzarella cheese
    8 oz grated Cheddar cheese
    1 lb chopped Velveeta cheese
    One 3 oz jar stuffed olives, chopped
    One 4 oz can of mushrooms
    Small bunch onion tops, chopped
    Small bunch parsley, chopped
    1 cup chopped onion
    1/2 cup chopped bell pepper
    2 stalks celery, chopped
    3 tbs margarine

Cook ground beef until it is very brown, then drain. Saute bell
peppers, onions, celery, onion tops and parsley. Add to ground meat.
Stir in half of the chopped Velveeta cheese and set aside.

Cut roll sausage in slices, brown, and put aside. Let cool and
crumble. Roll out all three loaves onto floured surface. Spread melted
margarine over dough.

Divide all ingredients into three parts and layer as follows:
    - ground meat mixture
    - roll sausage
    - smoked sausage
    - olives
    - mushrooms
    - Cheddar cheese
    - Mozzarella cheese
    - Velveeta cheese

Bring bread over, folding ends first. Bake 30-35 minutes if ready to
bake. If not, bake at 350F for 10 minutes or until light brown, then
freeze. Defrost. Bake another 20-25 minutes or until brown.

1/2 cup butter or margarine

1 egg, beaten

2/3 cup chopped cooked shrimp

2 ounces farmer or chevre (goat) cheese, crumbled

1 egg

1 egg yolk

1/2 cup half-and-half

2 teaspoons chopped fresh basil leaves or 3/4 teaspoon

dried basil

leaves



Heat oven to 375F. Place flour in medium bowl. Cut in

butter, using pastry blender or crisscrossing 2

knives, until mixture is crumbly.

Stir in 1 beaten egg until well mixed. Shape into a

ball. Divide into 24 balls. Press 1 ball on bottom and

up side of each of 24 ungreased small muffin cups, 1

1/4x1 inch.



Divide shrimp among cups. Sprinkle with cheese. Beat 1

egg and the egg yolk in small bowl. Stir in

half-and-half and basil. Spoon about 1 tablespoon egg

mixture into each cup.



Bake about 20 minutes or until light brown.

Immediately remove from pans to wire rack. Serve

immediately.

Hamburg Rolls

1 pound hamburger
1 package Lipton Beef Mushroom Soup
1 can water chestnuts, chopped
4 packages crescent rolls

Combine hamburger, soup and water chestnuts. Cut each triangle of rolls in half. Place small amount of meat in center of dough and bring corners together to cover meat. Bake at 425F for 17 minutes. May be prepared in advance, frozen and then baked 20 to 25 minutes.
