Here's one for this Saturday, the day for the Kentucky Derby:

2 eggs, slightly beaten
1 cup sugar
1/2 cup melted butter [real butter, not the phony stuff]
5 to 6 tablespoons bourbon [use a good brand]
1/4 cup corn starch
1 cup chopped pecans or walnuts
1 cup semi-sweet chocolate bits

Combine the eggs, sugar, melted butter and bourbon. Add the corn starch to the mixture, blending it in slowly.

Stir in the pecans and chocolate bits. Pour into an unbaked nine-inch pie shell.

Bake in a pre-heated 350 degree F. oven for approximately 45 minutes.

Garnish with real whipped cream.  None of that whipped topping stuff.
