SWISS POTATO SQUARES

8 to 10 medium boiled potatoes
6 T. melted margarine
2 tsp. salt
l/4 tsp. black pepper
l tsp. chopped parsley
l-l/2 c. diced Swiss cheese
l c. diced, cooked ham
l med. grated onionl tsp. garlic powder
3 eggs
l/2 c. milk

l. Peel potatoes. Mash until smooth.
2. Stir in melted margarine, salt, pepper and parsley. Spoon
about 2/3 of the potato mixture on bottom and sides of 8 by 8 inch baking dish.
3. Combine cheese, ham, onion and garlic powder. Spoon this mixture into potato-lined pan.
4. Beat together eggs and milk and pour over cheese and ham. Spoon remaining potato mixture over the top. Sprinkle with paprika and bake in 400 degree oven for 30 to 35 minutes or until puffed and golden. Cut into squares to serve.

 Potato Skin Snack
 Snacks, Potatoes
      Yield: 20 strips

      2    Baking potatoes
      2 T  Oil-free Italian salad
           -dressing
      2 t  Salt-free herbs and
           -seasoning blend regular
           -or spicy

  Bake potatoes at 400'F. for 1 hour or until done. Allow potatoes to
  cool.
 
  Cut potatoes in half lengthwise; carefully scoop out pulp, leaving a
  1/4" lining in shell. Cut shells into 5 strips. Place strips skin
  side down on a baking sheet. Brush with dressing; sprinkle with
  seasoning blend. Broil 6" from heat for 5 minutes or until browned.
  Serve warm. 11 calories each.

Boxty Cakes:

1/2 pound hot cooked potatoes, 1/2 pound grated raw potatoes, 2 cups flour, 1 teaspoon baking soda,
1 1/2 cups buttermilk, butter for frying, salt and pepper.
1.drain, peel and mash the hot potatoes.
2.stir in the raw potatoes, flour and baking soda.
3.add salt and pepper to taste.
4.mix well with enough buttermilk to make a stiff batter.
5.Shape into 3 inch patties about 1/4 inch thick.
6.fry on hot greased griddle until crispy and golden on both sides. Makes 12
.

FLUFFY POTATO CASSEROLE

2 cups mashed potatoes
1 (8 ounce) package cream cheese, softened
1 small onion, chopped
2 eggs, beaten
1 tablespoon all-purpose flour
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 (3 ounce) can French fried onions

Preheat oven to 300 degrees F (150 degrees C). Grease a 1 1/2 quart casserole dish. Combine mashed potatoes, cream cheese, onion, eggs, flour, salt and black pepper in an electric mixer. Beat 2 to 3 minutes at medium speed. Pour into prepared casserole dish. Spread fried onions evenly over the top. Bake uncovered for 30 to 35 minutes

HAWAIIAN BAKED POTATOES

1 can (8 oz.) crushed pineapple
2 baking potatoes (baked)
1/2 cup cheese spread heated
2 Tbls. chopped green pepper
2 Tbls. chopped green onion

Drain pineapple; save juice for beverage. Split and open baked potatoes. Combine remaining ingredients in a small bowl. Spoon over potatoes. Makes 2 servings. Note: This is a very simple way to jazz up baked potatoes!

Bacon Ranch Potato Salad

3 pounds new potatoes (cut into 1/4-inch slices)
1/3 cup cold water
1/2 cup Miracle Whip salad dressing
1/4 cup Kraft Ranch dressing
1/4 tsp salt
1/4 tsp pepper
1/8 tsp garlic powder
6 slices bacon (cooked crisp and crumbled)
1/2 cup celery slices
1/2 cup red pepper strips
1/2 cup sliced green onions

Place potatoes and water in 3-quart microwave dish and cover. Microwave on high for 14 to 16 minutes or until tender, stirring after 8 minutes; drain. Mix dressings and seasonings in large bowl until well blended. Add potatoes and remaining ingredients; mix well. Refrigerate for at least 30 minutes before serving. Makes 8 cups

Cheddar Muffins

Here is a great use for leftover mashed potatoes:
2 cups mashed potatoes
1 egg
1/3 cup oil
1 cup shredded cheddar cheese
1 2/3 cups flour
3 Tablespoons sugar
2 Tablespoons diced chives
1 Tablespoon dried parsley
1 Tablespoon baking powder
1 teaspoon salt

Into mashed potatoes beat egg, cheese and oil. Combine remaining ingredients then stir into potato mixture just until moistened.  Fill muffin cups 3/4 full. Bake at 400° for 20 - 25 minutes.
