Ubergato's Four Paws Up Firebreathing Chili
Ingredients:
1 and 1/2 pounds lean ground chuck (you may substitute 1/2 of meat with ground venison if you like..makes it more flavorful)
2 onions diced
4-6 dried red mexican peppers minced (according to how hot you like it)
4-6 Fresh Jalepeno peppers minced (according to how hot you like it)
2 large cans of petite diced tomatos
1 regular small can of Red Beans (not kidney beans ..the skin is too tough)
2 heaping tablespoons Minced Garlic
1 tsp salt
1 tsp pepper
1 tsp garlic salt
1 tsp Hungarian Paprika
3 tsp mexican chili powder
1/2 teaspoon Cumin
1 tsp Basil leaves
3 Bay leaves
Sautee ground chuck with Garlic salt and 1/2 of pepper ..don't let it cook in big chunks.
in seperate pan, sautee garlic, onions, mexican peppers and Jalepeno peppers till tender.  In large pot, combine meat and and sauteed veggies. Add tomatos and the single can of red beans. Add seasonings including remaining pepper and simmer for 1 1/2 to 2 hours to allow flavors to blend well. Remove Bay leaves before serving.
Get out Fireproof bowls, antacid tablets, and fire extinguisher and serve. Serves 6 normal servings or three gluttons. Heh...I load mine up with the peppers. If available, Serrano peppers may be substituted for Jalepenos. I generally use 8-10 of these because of the smaller size.
Additional notes: When Mincing Jalepenos, you might want to wear rubber gloves so that you don't wipe at your face or eyes later on and rub the oil in...holy Jesus...... it burns it burns!!!
