This is easy and tastes really good.
 
Cut six baby eggplants in half.  Grill on medium coals for five minutes per side.  Try to make a nice grill pattern on the side when on the grill.
 
Afterwards, add a topping.
 
You can make the topping by chopping up tomatoes (or patio tomatoes), five green onions, three teaspoons of lime juice, and cilantro to taste.  Go heavy on the cilantro; you won't be sorry.
 
Serve with fettuchini and Chianti.
 
Serves four.

     Bear that sounds absolutely devine....I would put a teensy bit of olive oil on them before grilling to prevent sticking to the grill. :>)

A great suggestion, Ubergato!  Actually, I use the barbarous practice of using Pam.  The topping uses some olive oil, too.  My omission there.  Eggplant is very forgiving, as is corn and carrots.
