2 lbs hamburger meat
1 medium onion
1 sm. box ( approximately 1 lb) of Velveta Cheese
2 sm. cans of enchilada sauce ( 1 hot, 1 medium)
12 corn tortillas
1 pkg. of taco seasoning.
Fry hamburger meat until brown. Drain and add taco seasonings and 1/2 cup water.
In corn oil in a skillet , insert tortillas ( 1 or 2 at a time) until they are soft.
In 9x12 baking pan, line the bottom with 6 of the tortillas.
Spread 1/2 of the hamburger meat over the tortillas. Add 1/2 of the onion finely chopped. Add 1/2 the Velveta cut into chunks.
Pour 1/2 of enchilada sauce over this.
Now repeat for one more layer.
Bake at 400 degrees until bubblely and cheese has melted. ( About 20 min.)
