yes while you bask in the sun the big chill is on down under
so i warm up with a generous (ubi sized bowl heh)  of this penne and chilli
 










Fresh Tomato And Chilli Pasta
Serves 4. (or two ubi sized appetites heh)
This recipe is best made just before serving.

Ingredients
500g penne pasta
½ cup (125ml) extra virgin olive oil
3 cloves garlic, crushed
3 medium fresh red chillies, seeded, chopped
4 medium (800g) ripe tomatoes, chopped
1 cup chopped fresh flat leaf parsley
salt and freshly ground black pepper
½ cup (40g) parmesan flakes

Method
1. Add pasta to a large pan of boiling well-salted water; boil, uncovered, until just tender; drain.

2. Meanwhile, warm the oil in a large frying pan; add the garlic and chillies and cook, stirring, for about 1 minute or until fragrant.

3. Add the tomatoes and parsley; remove from the heat.

4. Add the sauce mixture to the pasta; toss gently. Season to taste with salt and pepper.

5. Serve topped with parmesan flaked or grated.
 
(i use penne but any large sized pasta shapes will do ...oh and if you are really cold ...add the chilli seeds for extra warmth )
