Fresh Tomato And Chilli Pasta Serves 4. (or two ubi sized appetites heh)
This recipe is best made just before serving.
Ingredients500g penne pasta
½ cup (125ml) extra virgin olive oil
3 cloves garlic, crushed
3 medium fresh red chillies, seeded, chopped
4 medium (800g) ripe tomatoes, chopped
1 cup chopped fresh flat leaf parsley
salt and freshly ground black pepper
½ cup (40g) parmesan flakes
Method 1. Add pasta to a large pan of boiling well-salted water; boil, uncovered, until just tender; drain.
2. Meanwhile, warm the oil in a large frying pan; add the garlic and chillies and cook, stirring, for about 1 minute or until fragrant.
3. Add the tomatoes and parsley; remove from the heat.
4. Add the sauce mixture to the pasta; toss gently. Season to taste with salt and pepper.
5. Serve topped with parmesan flaked or grated.
