Red Velvet Cookies
1 Box Duncan Hines Red Velvet Cake Mix
2 eggs
1/3 cup oil
Mix all ingredients together. This will make a cookie dough. Roll into balls and place on a lightly greased cookie sheet. Flatten down slightly (depending on the thickness you desire). Bake at 375° until the tops crackle (about 8-10 minutes) or until desired doneness. Cool and then frost with basic cream cheese frosting.
Fruit & Nut Cake Mix Cookie
1 white cake mix (Betty Crocker
3 c flour
1 tsp Bk Powder
3/4 c water
3/4 c oil
2 eggs
1 tsp vanilla
1 c raisins (soak in water to plump
1 c chopped maraschino cherries
1 c chopped nuts
Bake 350 8-10 min. glaze while warm.
Cherry Cake Mix Cookies
1 package White Cake Mix or Cherry Chip
1/3 cup oil
1/2 teaspoon almond extract
2 eggs
1 cup candied cherries or maraschino cherries
1/2-1 c chopped nuts
Heat oven to 375 F. In large bowl, combine cake mix, oil, extract and eggs; stir with spoon just until thoroughly moistened. Stir in cherries. Shape dough into 1 inch balls. Place 2 inches apart on ungreased cookie sheets. Bake at 375 F. for 6-8 minutes or until edges are light golden brown. Note: For a new flavor try substituting 1 tsp. rum extract for the almond extract.
Lemon Cake Mix Cookie
Yield: 72 Servings
18-1/4 oz pkg lemon cake mix
1 Egg
4 oz Container frozen non-dairy whipped topping, thawed
1/2 c Sifted confectioner's sugar
Preheat oven to 350 F. In a large bowl, combine cake mix, egg and topping. Batter will be very stiff. Drop by Teaspoons into confectioner's sugar. Roll into 1" balls, using sugar to keep dough from sticking to hands. Place balls of dough 2" apart on greased baking sheet. Bake for 10-12 minutes or until light brown on bottom. Transfer to a wire rack to cool completely. Store in an airtight container.
Cake Mix Cookies
I box of cake mix... any kind
I box of 8 oz. Kool Whip very soft.
1 large egg
Pour cake mix in large bowl. Whip egg with a fork and then mix it in the kool whip.. pour that into the cake mix and mix very well. Scoop out teaspoon on spoon and use another teaspoon to take it off the first one onto a plate of powdered sugar. Roll in the powdered sugar and put on to a cookie sheet. Bake 350 for 12-13 minutes. This makes a little over 3 dozen cookies..
Coconut Chip Cookies
1 package (18 1/4 oz.) white cake mix
2 eggs
1/3 cup vegetable oil
1 cup flaked coconut
1/2 cup semisweet chocolate chips
1/4 cup chopped macadamia nuts or almonds
In a mixing bowl, beat dry cake mix, eggs and oil (batter will be very stiff). Stir in coconut, chips and nuts. Roll into 1 inch balls. Place on lightly greased baking sheets. Bake at 350 for 10 minutes or until a slight indentation remains when lightly touched. Cool for 2 minutes; remove to a wire rack to cool completely.
