3 or 4 cans of chili beans or fancy red kidney beans
1 large can of tomato juice
1 can of tomatoes chopped up
1-2 lbs. of ground beef (lean)
1 sm onion chopped (may substitute dehydrated onions if preferred)
1 package chili-o mix (French's brand)
Rosemary about 5 sticks broken up
1/8 tsp Thyme (or a little more to taste)
a small amount of Italian Seasoning
1/4-1/2 tsp. Ground Allspice
Chili powder to taste
a couple of dashes of Louisianna hot sauce
red peppers or whatever hot peppers you like
salt and pepper to taste
In a large pot, add beans, tomato juice, tomatoes, spices and turn on heat to medium stirring occassionally.
In a skillet add ground beef and brown it.. add the onions and brown them too until transparent with the ground beef so don't add them right away. Drain and add to beans and juice in pot.
Cook to boiling then reduce heat and simmer at least an hour before serving.
