Bacon Southwest Ranch Cheeseburgers
Makes 4 sandwiches.

Ingredients

1 - pound ground beef
Salt & pepper to taste
4 - slices American Cheese Slices
4 - Kaiser rolls, split, toasted
8 - slices Bacon, crisply cooked
1/4 - cup Ranch Dressing
1/4 - cup salsa

Directions

  • To the ground beef, add salt and pepper. 
  • Shape ground beef into 4 patties. 
  • Cook patties in skillet on medium heat 7 to 9 minutes on each side or until cooked through (160°f).
  • Top each patty with cheese slice and cover. Continue cooking until cheese begins to melt. 
  • Fill rolls with cheeseburgers. 
  • Then top with bacon, dressing and salsa.

Makes 6 servings.

1-1/2 - pounds lean ground beef
1 - small onions, finely chopped
1/2 - teaspoon salt
1/4 - teaspoon pepper
6 - hamburger buns, split and toasted
1/2 - cup blue cheese dressing
6 - slices bacon, crisply cooked and broken in half

Heat coals or gas grill for direct heat.

  • In a mixing bowl, add beef, onions, salt and pepper. 
  • Lightly mix and shape into 6 patties, each about 3/4 inch thick.
  • Cover and grill patties 3 to 4 inches from medium heat 10 to 11 minutes, turning once, until no longer pink in center and juice is clear.
  • Place burgers on bottom half of buns. 
  • Spoon dressing onto burgers; top each with 2 pieces of bacon. 
  • Top with top half of buns.

Grilled Big E Ranch Burgers
Makes 4 servings.

1 - Tablespoon vegetable oil
1 - cup onion rings, sliced
1/3 - cup green pepper strips, sliced
1/3 - cup red pepper strips, sliced
3 - Tablespoons steak sauce

Preheat grill to medium heat.

  • In a skillet, add the oil and heat to medium heat. 
  • Add the onion, green pepper and red pepper and cook until tender-crisp. 
  • Stir in steak sauce and horseradish and keep warm.
  • To the ground beef, add salt and pepper. 
  • Shape ground beef into 4 patties. 
  • Place on grill and cook each side or until cooked through. 
  • Fill rolls with patties and top with pepper mixture.

Grilled Caramelized Onions Circle E Ranch Burgers
Makes 4 Servings.

Prep Time: 20 minutes
Cooking Time: 13 - 15 minutes

Ingredients

2 - teaspoon sweet paprika

2 - teaspoon dried thyme

1-1/2 - teaspoon salt

1 - teaspoon garlic powder

1 - teaspoon onion powder

1/2 - teaspon ground black pepper

1/2 - teaspoon ground red pepper

1/2 - teaspoon ground white pepper

 

1 - pound ground beef

4 - teaspoon Ranch Rub

1 - tablespoon butter

1 - medium onion, cut into thin wedges

1 - tablespoon packed brown sugar

4 - hamburger buns, split

   Romaine lettuce, tomato slices

Directions

Preheat grill to medium heatIn a small bowl, add the paprika, thyme, salt, garlic powder, onion powder and ground peppers and mix. Store in airtight container. Shake before using. 

  • Lightly shape ground beef into four 3/4-inch thick patties. Press 1 teaspoon Ranch Rub onto each patty.
  • On the grid, place patties uncovered for 13 to 15 minutes to medium (160°F) doneness. 

  • You do not want pink in center and juices show no pink color, turning occasionally.

  • In a large skillet, heat butter and add the onion and brown sugar. Stir and cook for 8 to 10 minutes or until onion is caramelized. 

  • Line bun bottom with lettuce and tomato. Top with burger. Evenly divide onion mixture over burgers.

Grilled Chopped Steak Burger
Makes 4 steaks.

Ingredients

1-1/2 - pounds ground sirloin 

1/4 - cup onion, grated

1 - tablespoon roasted chile pepper, chopped

1 - teaspoon salt

1 - teaspoon pepper

1 - teaspoon Worcestershire sauce

1/4 - teaspoon red Tabasco sauce

 

4 - buns (your choice)

Directions

Prepare grill to medium-high heat.

  • In a mixing bowl, add the ground sirloin, onion, chili pepper, salt, pepper, Worcestershire, and Tabasco and mix.  You do not want to over mix!  It toughens the burger.  
  • Next, cut the prepared ground sirloin mixture into four sections.  Press the sections into patties.  You want them to be 3/4-inch thick evenly.
  • Broil steak in broiler 3 to 5-inches from heat, or grill over medium coals.  Cook burgers 5 to 7 minutes per side or to desired doneness.  When cooking, only turn one time.
  • When done, place burger on buns and serve.

1-1/2 - pounds lean ground beef
1 - garlic cloves, finely chopped
3/4 - teaspoon chili powder
3/4 - teaspoon salt
1/3 - teaspoon pepper
1/3 - teaspoon ground cayenne red pepper
6 - hamburger buns, split and toasted

Heat coals or gas grill for direct heat.

  • In a mixing bowl, add the ground beef, garlic, chili powder, salt, pepper, and cayenne. 
  • Shape into 6 patties, each about 3/4 inch thick.
  • Cover and grill patties 3 to 4 inches from medium heat 10 to 11 minutes, turning once, until no longer pink in center and juice is clear.

Grilled Nacho Cheeseburgers
Makes 4 servings.

4 - lean ground beef patties
1/8 - teaspoon salt
1/3 - teaspoon garlic pepper
1/4 - cup mild or spicy nacho cheese sauce
4 - green onions, sliced
4 - hamburger buns, split and toasted

Heat coals or gas grill for direct heat.

  • Sprinkle 1 side of each ground beef patty with garlic pepper. 
  • Cover and grill patties, pepper side up, 4 to 5 inches from medium heat about 10 minutes for medium doneness, turning once.
  • During last minute of grilling, spoon 1 tablespoon cheese sauce onto each patty and spread slightly. 
  • Cover and grill until cheese sauce begins to melt. 
  • Sprinkle with onions. 
  • Serve on buns.

Grilled San Antonio Burgers
Makes 6 servings.

1-1/2 - pounds ground beef
1/2 - cup steak sauce, divided
1/3 - cup onion, chopped
1/3 - cup green chilies, chopped
6 - hamburger buns, split
Guacamole
Monterey jack or cheddar cheese, shredded
Tomato, chopped

Preheat grill to medium heat.

  • In a mixing bowl, add ground beef, 1/4 cup of the steak sauce, onion and chilies. 
  • Shape mixture into 6 patties.
  • Grill patties over medium coals for 7 to 9 minutes on each side or until cooked through. 
  • Occasionally brushing patties with remaining 1/4-cup steak sauce.
  • Serve in buns topped with guacamole, cheese and tomato.

Grilled Taco Cheeseburgers
Makes 4 servings.

1 - pound ground beef
1 - package (1-1/4 ounces) taco seasoning mix
4 - cheddar cheese singles
4 - Kaiser rolls, split, toasted
shredded lettuce
salsa
ripe olives, pitted and sliced
onions, chopped
sour cream
guacamole
jalapeno peppers, sliced

Preheat grill to medium heat.

  • In a mixing bowl, add ground beef and taco seasoning. 
  • Mix and shape into 4 patties. 
  • Grill patties 7 to 9 minutes on each side or until cooked through. 
  • Top with singles and grill an additional 1 to 2 minutes or until singles are melted. 
  • Place burgers on bottom halves of rolls; top with lettuce, salsa and olives.
  • You may also include the onions, sour cream, guacamole, and jalapeno peppers. 
  • Cover with tops of rolls.

Hamburger Biscuit
Makes 4 servings.

1 - can (16.3-ounces) refrigerated buttermilk biscuits
1-1/2 - pounds lean ground beef
2 - Tablespoons onion, chopped
1/4 - teaspoon salt
1/4 - teaspoon pepper
1/8 - teaspoon garlic powder
4 - lettuce leaves
4 - tomatoes slices
4 - onion slices

Heat oven to 350°F. Lightly grease cookie sheets.

  • Separate dough into 8 biscuits. 
  • Press or roll each to form 5 (1/2-inch) round. Place on greased cookie sheets. 
  • Bake at 350°F. for 15 to 17 minutes or until light golden brown.
  • Meanwhile, in large bowl, add ground beef, onion, salt, pepper and garlic powder. 
  • Mix well. 
  • Shape ground beef mixture into 4 (5-inch) patties. 
  • Over medium heat, heat 12-inch nonstick skillet, heat until hot. 
  • Add patties and cook 10 to 12 minutes or until thoroughly cooked, turning once.
  • Place 4 baked biscuits, bottom side up, on plates. 
  • Top each with patty, lettuce, tomato and onion. 
  • Top each with baked biscuit, bottom side down.

Honey-Mustard Mint Burgers with Grilled Pineapple
Makes 4 servings.

1/4 - cup honey
1/4 - cup Dijon mustard
1 - Tablespoon fresh mint leaves, finely chopped
1/4 - teaspoon salt
1/8 - ground pepper
1 - pound ground beef
Salt & pepper to taste
4 - fresh pineapple slices
1 - Tablespoon vegetable oil
4 - hamburger buns, split
1 - cup any lettuce type

Prepare outdoor grill for cooking by the direct heat method.

  • In small bowl, add honey, mustard, mint, salt and pepper. 
  • Whisk together and set aside.
  • To the ground beef, add salt and pepper. 
  • Shape into 4 patties. Brush both sides of the patties with honey-mustard glaze and place on the grill. 
  • Cook until golden brown on one side, about 5 to 8 minutes. 
  • Turn over and continue grilling. 
  • Glaze each side one additional time while grilling. 
  • Grill burgers about 15 to 20 minutes or until meat thermometer inserted into center reaches at least 160°F.
  • Meanwhile, brush the slices of pineapple with oil and grill for 1 to 2 minutes per side or until golden brown.
  • Place the buns on the grill and heat for 20 to 30 seconds. 
  • Remove from the grill and place a burger on the bottom half of each bun. 
  • Top each burger with a slice of pineapple and lettuce leaves.

Pesto Swiss Cheese Burgers
Makes 4 servings.

1 - pound lean ground beef
1/4 - teaspoon salt
1/8 - teaspoon pepper
1/2 - cup pesto
4 - Swiss cheese slices
4 - hamburger buns, split

Set oven control to broil.

  • In a mixing bowl, add ground beef, salt and pepper. 
  • Shape beef into patties, each about 3/4 inch thick. 
  • Place patties on rack in broiler pan.
  • Broil with tops 3 to 4 inches from heat 5 to 7 minutes on each side for medium, turning once, until no longer pink in center and juice is clear. 
  • Spread patties with pesto. 
  • Top each patty with a slice of cheese. 
  • Broil just until melted.
  • Serve patties in buns.

Pizza Burger
Makes 4 sandwiches.

1 - pound ground beef

Salt & pepper to taste

1/2 - cup marinara sauce

4 - ounces mozzarella cheese, cut into 8 slices

8 - slices pepperoni

4 - seeded Italian bread rolls, split

  • To the ground beef, add salt and pepper. Shape ground beef into 4 patties. 

  • Broil patties 3 to 4 inches from heat source about 6 minutes on each side or until cooked through (160°F) and no longer pink.

  • In small microwave-able bowl, microwave sauce on high 30 seconds or until thoroughly heated. 

  • Top each burger with 2 tablespoons sauce and 2 slices cheese.

  • Broil until you melt cheese. 

  • Serve in rolls. Serve topped with additional sauce, if desired.

Queso Burgers
Makes 6 servings.

1 - package (16 ounces) pasteurized process cheese, cut in 1-inch cubes
1 - can (10 ounces) Ro-Tel® Original Diced Tomatoes and Green Chilies
1-1/2 - pounds ground chuck or beef
Salt & pepper to taste
6 - hamburger buns, toasted
6 - lettuce leaves
6 - tomato slices

  • In a 1-1/2 quart microwave-safe dish, add cheese and tomatoes. 
  • Mix and cover. 
  • On medium, microwave for 10-12 minutes, stirring once during cooking, or until cheese is melted. 
  • Stir and set aside.
  • Season ground beef with salt and pepper to taste and form into 6 patties. 
  • Grill or pan fry until no longer pink in center. 
  • Build each hamburger on bun with lettuce and tomato.
  • Drizzle queso (cheese-tomato mixture) over each patty; top with bun. 
  • Serve each sandwich with a cup of queso for dipping burger while eating.

Tangy Sloppy Joes
Makes 6 sandwiches.

Prep Time: 10 minutes

Cooking Time: 15 minutes

Ingredients

1 pound lean ground beef

1 medium onion, chopped

1/2 cup ketchup

3 tablespoons prepared mustard

1/2 tablespoonWorchester sauce

6 hamburger buns

Directions

  • In a skillet, saut onions until tender. Remove and set aside. Brown ground beef. 

  • Add and stir in reserved onions, ketchup, mustard and Worchester sauce.

  • Cover and simmer 15 minutes or until mixture thickens slightly, stirring occasionally.

  • Spoon mixture over bottom halves of buns and top with remaining halves.

Sweet Hawaiian Mini Burgers
Makes 4 sandwiches.

Ingredients

1 - pound ground beef chuck

4 - teaspoon Worcestershire sauce

4 - can pineapple slices

Salt

8 - Hawaiian sweet or small dinner rolls, split

Lettuce

Sauce

1/4 - cup barbecue sauce

1/4 - cup pineapple preserves

1 - tablespoon brown sugar, packed

Directions

  • In a medium bowl, add the ground beef and Worcestershire sauce. 
  • Mix lightly but thoroughly. 
  • Shape into 8 (1/2-inch) thick mini patties.
  • To make the sauce, in a saucepan, add the barbecue sauce, pineapple preserves, and brown sugar. 
  • Bring to a boil, stirring frequently. Remove from heat.
  • 3 to 4 inches from heat, broil pineapple slices. Broil 3 to 4 minutes, turning once and brushing with sauce. 
  • Remove pineapple; keep warm.
  • On a grill, cook 7 to 8 minutes to medium (160°F) doneness, until not pink in center and juices show no pink color, turning halfway through and brushing with sauce. Season with salt.
  • Cut each pineapple slice into thirds. 
  • Line bottom of each roll with lettuce; top with a burger, then with a pineapple piece.
