Apple Cookies

A nice soft chewy cookie ... and it even includes some things that are good for you.

2 c Flour
1 t Sodium Free Baking Soda
1 t Cinnamon
1/2 t Cloves
1/2 t Nutmeg
1/2 c Unsalted Butter
1 1/4 c brown sugar,firmly packed
1 egg
1 c Pecans,Chopped
1 c Apple,Finely Chopped
1 c raisins
1/4 c Skim Milk

Sift flour with baking soda, salt, cinnamon, cloves and nutmeg. In a large mixing bowl, cream shortening and brown sugar; beat in egg until well-blended. Stir in half of flour and spice mixture, then stir in walnuts, apple and raisins. Blend in milk, then remaining flour mixture. Drop by rounded tablespoons of dough, about 2 inches apart, onto greased baking sheets. Bake at 375 degrees for 12 to 15 minutes, or until done.

Spicy Melon Salsa

Ingredients
1/2   cantaloupe, halved, seeded, rind removed and melon diced (about
2-1/2 cups)
1  can (8 ounces) crushed pineapple in juice
1  medium-size sweet red pepper, cored, seeded and diced (3/4 cup)
2   scallions, trimmed and thinly sliced
1   jalapeno chile, seeded and finely chopped
2  tablespoons fresh lime juice
2  tablespoons vegetable oil
2  tablespoons chopped fresh cilantro

Directions
In large bowl, gently toss together the cantaloupe, pineapple with
juice, peppers, scallions, jalapeno, lime juice, oil and cilantro.
Cover; refrigerate until ready to serve, or up to 2 days. Makes 16
servings (4 cups).

Low Fat Devil's Food Cake
This makes a fairly heavy, very moist cake ... almost like
brownies or bars of some sort. If you don't mind the caffeine, you
probably won't find a chocolate dessert with less  bad-for- you
stuff in it.
     2 c  Flour
 1 3/4 c  Sugar
   1/2 c  Unsweetened Cocoa Powder
     1 T  Sodium Free Baking Soda
   2/3 c  Applesauce
   1/3 c  Buttermilk
     2 T  Oil
     1 c  Coffee
Preheat oven to 350 degrees. Spray a 9x13 pan with non-stick
vegetable oil spray and then dust with flour, shaking out the
excess. In a large bowl, mix together flour, sugar, cocoa and
baking soda. Stir in applesauce, buttermilk and oil. Heat coffee
to boiling. Stir in batter. mixture will be thin. Pour into pan.
Bake 35-40 minutes, until a toothpick inserted in the center comes
out clean.
Yield: 24 Servings

Jack Daniel's Fruit Cake



     1 c  Unsalted Butter
     2 c  Brown Sugar
     1 c  Egg Substitute or 4 Large Eggs
     3 c  Flour
     2 t  Sodium Free Baking Soda
   1/3 c  Jack Daniel's Whiskey
   1/2 c  Orange Juice
     3 c  Pecan Halves
     6 c  Mixed Candied Fruit

Cream together margarine and brown sugar until light and fluffy.
Add eggs, beat well. Stir together flour and baking soda. Add
flour to butter mixture alternately with whiskey and orange juice.
beat on low speed until well blended.  Stir in fruit and nuts.
Grease 3 8 1/2 by 4 1/2 inch loaf pans.  Line bottoms with waxed
paper.  Spoon mixture evenly into pans.  Bake about 1 hour 15
minutes at 325, or until toothpick inserted in center comes out
clean.  Cool on rack.  Remove from pans. Wrap each cake in
cheesecloth.  Soak cheesecloth with additional whiskey.  Wrap
tightly in plastic wrap, then aluminum foil.  Store in
refrigerator 2 weeks before serving.

Yield: 36 Servings

Apple Rhubarb Crisp
 
 
Filling:
2 cups fresh or frozen unsweetened sliced rhubarb, thawed and drained (about 16 oz. frozen or 10 oz fresh)
2 medium cooking apples, cored, peeled, and sliced (about 2 cups)
1/2 cup sugar or Splenda
1 T cornstarch
 
Topping:
2/3 cup regular or quick cooking rolled oats
1/2 cup all purpose flour
1/2 cup light brown sugar or brown sugar Splenda
3 1/2 T light margarine or transfat free vegetable oil spread
 
Combine filling ingredients in a large bowl.  Mix well.  Let stand 1 hour and spoon into 1 qt. baking dish or 8x8 pan.
 
Preheat oven to 375 degrees.  Stir together first three topping ingredients in small bowl. Using a pastry blender, but in margarine until mixture resembles coarse crumbs.  Sprinkle topping over rhubarb mixture.
Bake, uncovered for 30-40 minutes or until topping is light brown.  Let cool for about 20 minutes before serving.

    1/4 c  Egg Substitute
      2 T  Unsalted Margarine,Melted
      2 t  Sodium Free Baking Powder
      2 T  Sugar
      1 c  Skim Milk
    1/2 c  Strawberries,Sliced
Stir together the dry ingredients.  Mix together the rest of the
ingredients and stir into dry, stirring until just moistened.  Spoon

Strawberry Ice Cream
 
2 c  Milk
    1/2 c  Egg Substitute
    3/4 c  Sugar
      2 c  Strawberries,Sliced
      2 c  Half & Half,Non-Fat
Combine strawberries and 1/4 cup of the sugar.  Stir and allow to sit
for 10 minutes.  Mix together  milk, half and half,  egg substitute and
remaining sugar.  Stir in berries.  Process according to freezer
directions.

Almond Macaroons
2 egg whites
3/4 cup sugar
1/2 tsp pure almond extract (optional)
2 cup blanched almonds finely ground (8 ounces)
1 tbsp potato starch

1. In mixing bowl, beat egg whites until foamy.
2. Gradually beat in sugar and almond extract, if used, until stiff,
shiny peaks form.
3. Combine almonds and potato starch and stir into meringue.
4. On greased baking sheets lightly dusted with potato starch, pipe
through large star tip or drop by tablespoons forming small mounds
two-inches apart.
5. Bake at 350F degrees 18 to 20 minutes, until firm and lightly
browned. Cool on racks. Store in an airtight container. Makes about 30
cookies.

Sweet Potato Pudding
 
Coconut milk gives this pudding it's unique flavor.  You should be able
to find it in the baking aisle of many large supermarkets.
      4 c  Sweet Potatoes,Cooked And Mashed
      1 T  Lime Juice
    3/4 c  sugar
      2    eggs
      2 T  butter
    1/2 c  coconut milk
    1/4 c  Rum
    1/2 t  Sodium Free Baking Powder
    1/2 t  Cinnamon
    1/4 c  Raisins
To mashed potatoes, add sugar gradually and eggs, one at a time, mixing
well after each addition. Mix in butter with a fork. Add milk. Blend
well. Mix in lime juice and rum. Mix well. Add baking powder and
cinnamon, stirred together.  Add raisins. Mix well. Pour mixture into a
greased tube cake or Bundt pan and bake in a moderate oven (350
degrees) about 50 minutes, until done.
Yield: 8 Servings

Apple Butter Muffins
Sweet enough to eat without adding anything on them.
      2 c  Flour
      1 T  Sodium Free Baking Powder
      5 T  Unsalted Butter
      2 T  Sugar
      1    Egg,Beaten
    1/2 c  Skim Milk
      6 T  Apple Butter
      2 T  Brown Sugar
      1 T  Flour
    1/4 t  Cinnamon
Combine flour, baking powder and sugar in a mixing bowl.  Cut in butter
until mixture resembles coarse crumbs.  Combine egg, milk and 2
tablespoons of the apple butter. Stir until just moistened.  Spoon into
12 paper lined or greased muffin pans, Top each with 1 teaspoon of the
apple butter. Combine brown sugar, flour and cinnamon and sprinkle over
top.  Bake at 400 degrees F for 20 to 25 minutes.
Yield: 12 Servings

      4 c  Apples,Peeled And Sliced
    1/2 c  Brown sugar
    3/4 t  Cinnamon
      2 T  Lemon Juice
      2 T  Tapioca
      1 c  Water,Boiling
In medium bowl, toss apples with brown sugar, cinnamon, and tapioca
until evenly coated. Place apples in slow cooker. Pour lemon juice over
top. Pour in boiling water. Cook on high for 3-4 hours.

Rocky Road Pizza
 
    3/4 c  Unsalted Butter
    3/4 c  Brown sugar
      1    Egg yolk
      1 t  Vanilla
  1 1/2 c  Flour
  1 1/4 c  Chocolate Chips
  1 1/2 c  Miniature Marshmallows
    1/2 c  Dry Roasted Peanuts,chopped
Beat the butter or margarine in a large mixing bowl with an electric
mixer on medium to high speed for 30 seconds. Add brown sugar and beat
till combined.  Beat in egg yolk and vanilla till combined. Beat in as
much of the flour as you can with the mixer. Stir in any remaining
flour with a wooden spoon. Spread dough in a lightly greased 12-inch
pizza pan. Bake in a 350F oven about 25 minutes or till golden.
Sprinkle hot crust with the chocolate pieces. Let stand 1 to 2 minutes
to soften. Spread chocolate over crust. Sprinkle with marshmallows and
nuts. Bake 3 minutes more or till marshmallows are puffed and beginning
to brown. Cool in pan on a wire rack.
Yield: 16 Servings

Honey Topped Coffee Cake
 
A tropical coffee cake, with a pineapple/coconut/honey topping.
This one didn't last any time at all and is sure to be made
again.  If your spice rack doesn't contain any mace, go get some.
It adds a hard to describe, but very nice flavor to this
breakfast treat.
  1 1/2 c  Flour
    1/2 c  Sugar
      2 t  Sodium Free Baking Powder
    1/2 t  Mace
  8 3/4 cn Pineapple,Crushed
    1/4 c  Egg Substitute
    1/4 c  Oil
    1/3 c  Honey
    1/2 c  Granola
    1/4 c  Coconut
Stir together dry ingredients.  Drain pineapple, reserving syrup.
Add water to syrup if necessary to make 1/2 cup.  Combine syrup,
egg and oil.  Add to flour mixture, stirring until smooth.  Pour
into 9x 1 1/2 inch round baking pan sprayed with non-stick
vegetable oil spray.   Combine honey, pineapple, granola and
coconut.  Spread over batter.  Bake at 400 until done, about 25
minutes.
Yield: 8 Servings

Oatmeal Butterscotch Cookies
 
These could be even lower with chocolate chips, but I was in a
butterscotch mood and the butterscotch chips have more sodium the
chocolate.  So were our dogs it seems. They can hear and
recognize the sound of the cookie jar lid from two rooms away
even if they are sound asleep.  We made these cookies for
Christmas gifts a few years ago, layering everything except the
margarine, egg and vanilla in a quart jar.
      1 c  Sugar
      1 c  Brown Sugar
      2 c  Flour
    1/2 t  Sodium Free Baking Soda
    1/2 t  Nutmeg
    1/2 t  Cinnamon
    1/4 c  Unsalted Margarine
    1/4 c  Egg Substitute
    1/2 t  Vanilla
      1 c  Quick Cooking Oats
      6 oz Butterscotch Chips
Cream together margarine, egg and vanilla.  Add dry ingredients
and mix well.  Stir in oats and chips.  Drop by rounded teaspoons
on a greased cookie sheet.  bake at 375 9-12 minutes or until
lightly browned.
Yield: 40 Servings

      2 c  Brown Sugar
      1 c  Sugar
      1 c  Non Fat,Non Diary Creamer
    1/2 c  Unsalted Margarine
      2 c  Marshmallow Creme
      3 c  Chocolate Chips
      2 T  Instant Coffee
Combine first 4 ingredients in a large saucepan.  Cook to 234
degrees on candy thermometer.  Remove from heat and let bubbles
subside.  Stir in remaining ingredients until well blended.  Pat
into buttered 9 inch square pan. Cut into squares when cool.
Yield: 81 Servings

1 c  Bananas (Extra-Ripe)
1/2 c  Egg Substitute
1 c  Brown Sugar,Packed

1 c  Chocolate Chips

Purée bananas in blender. In medium bowl, beat puréed bananas,
eggs, sugar, butter and vanilla until well blended. In large
bowl, combine flour, baking powder, cinnamon and salt. Stir in
choc. chips and nuts. Make well in center of dry ingredients.
Pour in banana mixture. Mix until just blended. Spoon into well-
greased or paper lined 2 1/2- inch muffin cups. Bake in 350 oven
25 to 30 minutes.
Yield: 12 Servings
