 Angel Biscuits Makes 2 dozen biscuits. Prep Time: 10 min. Cooking Time: 15 min. Ingredients  5 - cup all-purpose flour  1 - tablespoon baking powder  1 - teaspoon salt  1/4 - cup sugar  1 - teaspoon baking soda  1 - cup shortening  1 - package dry yeast  2  - tablespoon warm water (105° to 115° F.)  2 - cup buttermilk  1/2 - cup butter, soft Directions  Preheat oven to 400°F and grease baking sheets.   - Into a large mixing bowl, sift in the flour, baking power, salt, sugar and baking soda.   
 - Cut in the shortening until mixture is consistency of coarse meal.   
 - Dissolve yeast in warm water.   
 - Stir into the flour mixture, the yeast mixture and buttermilk. Mix well.   
 - Turn dough out on lightly floured surface and roll dough about 1/4-inch thick.   
 - Spread butter evenly on the rolled dough. Fold dough in half and cut into 2-inch squares.   
 - Place on baking sheets.   
 - Bake for 15 minutes.

 Apache Rolls Makes about 10 rolls  1 - cup white cornmeal 1 - cup yellow cornmeal 1 - teaspoon salt 1-1/2 - teaspoon cayenne 1 - cup boiling water 1/2 - cup bacon drippings green corn husks  Preheat oven to 350º F.   - In a mixing bowl, add white cornmeal, yellow cornmeal, salt, and cayenne.    
 - Mix.  
 - Wet down with the water and bacon drippings, and form into small rolls.  
 - Wrap in corn husks and bake in the oven 1 hour.

 Banana Bread Makes 1 loaf or 10 slices   Ingredients  1-3/4 - cups all-purpose flour   2 - tablespoons baking powder  1/4 - teaspoon baking soda  1/2 - teaspoon salt  1/3 - cup shortening  2/3 - cup sugar  2 - eggs  3 - ripe bananas, mashed  1 - cup nuts, chopped (optional) Directions  Preheat oven to 350   - In a mixing bowl, sift together the flour, baking powder, baking soda and salt.  
 - In another mixing bowl, beat shortening until creamy.    
 - Then gradually add sugar to shortening and beat until light and fluffy.    
 - Now add the eggs and continue to beat.  
 - To the creamy shortening, begin to slowly alternate adding the flour mixture and bananas.    
 - You want to put in a small amount at a time.  Mix after each addition, only enough to moisten dry ingredients.  Now, add the nuts if desired.  
 - Turn into greased and floured loaf pan.  
 - Bake for 1 hour and 10 minutes, or until bread is done.

     Black Walnut Banana Loaf  Makes 1 loaf. |    | 1/4 - cup skim milk   1/2 - teaspoon white vinegar  1-1/2 - cup all-purpose flour  1/2 - cup SPLENDA® Granular  1-1/2 - teaspoon baking powder  1/2 - teaspoon baking soda  1/4 - cup chopped black walnuts  2 - medium bananas  2 - Tablespoon no-fat sour cream  1 - egg or equivalent in egg substitute  Preheat oven to 350º F. Spray a 9-by-5-inch loaf pan with butter-flavored cooking spray.   - In a small bowl, add skim milk and vinegar. Mix and set aside.  
 - In a large bowl, put in flour, SPLENDA, baking powder, and baking soda. Stir in walnuts.

In medium bowl, mix mashed bananas, sour cream, egg, and milk mixture. Fold in banana mixture to flour mixture.     -  
Mix gently just to combine. Evenly spread batter into prepared loaf pan.    - Place in oven and bake for 40 to 50 minutes or until a toothpick inserted in center comes out clean.   
 - Place loaf pan on a wire rack and let set for 10 minutes. Take out bread from pan and continue cooling on wire rack.

 - Mix ingredients together.  
 - In a small bowl, combine blueberries with 2 tablespoons sugar.  
 - In a small bowl, beat the egg and milk together.    
 - Add to dry ingredients.    
 - Stir in butter and blueberries batter.    
 - Spoon into buttered muffin tins.    
 - Fill 2/3 full  
 - Bake 15 to 20 minutes.

 - In another bowl, I beat eggs until smooth.

Ingredients  3-1/4 - cups milk 1 - cup yellow cornmeal 1/4 - cup butter 1 - teaspoon salt 1 - teaspoon sugar 4 - eggs, separated 1/4 - cup onion, minced 1 can (4 ounces) diced roasted green chiles  Directions  Preheat oven to 325° F. and grease 2-quart casserole or baking dish.   - Use a double boiler to heat milk.   
 - Into the hot milk, gradually add the cornmeal.   
 - You want to stir constantly.   
 - Cook until thick and spongy.  
 - Remove from the heat and stir in the butter, salt, and sugar.   
 - In another bowl, beat the egg whites until stiff.   
 - Set aside.   
 - In a large bowl, beat the egg yolks until thick.   
 - Then slowly add into the cornmeal mixture.   
 - Then add the onion and chiles.   
 - Finally, fold in the egg whiles.  
 - Pour into the dish.   
 - Set the dish into a pan of hot water and place in oven.   
 - Bake for 1-hour or until bread is firm.
