   1 1/2  cups          Sugar
   3                    Eggs
     1/2  cup           Oil
   1      teaspoon      Vanilla
   2 1/2  cups          All purpose flour
   2      teaspoons     Baking powder
   1      teaspoon      Baking soda
   1      teaspoon      Cinnamon
   1      teaspoon      Salt
   4      cups          Apples -- diced and UNpeeled
   1      cup           Nuts -- chopped (optional)
   1      cup           Butterscotch chips

Mix sugar, eggs, oil and vanilla. Add flour mixed with baking powder,
soda, cinnamon and salt; mix well. Stir in nuts and apples.
Spread in well greased 9x13 inch pan.
Sprinkle top with butterscotch chips and bake at 350~ for 30 to 40 minutes,
or until done.

   2 1/4  Cups          Sifted Flour
   1      Teaspoon      Baking Powder
     1/4  Teaspoon      Salt
     1/2  Cup           Shortening
                        Sugar
   2                    Eggs
   1      Cup           Milk
   1      (8-Ounce)     Package Cream Cheese
     1/2  Cup           Chopped Walnuts
   1      Tablespoon    Grated Orange Peel
     1/4  Cup           Orange Juice

Sift together flour, baking powder and salt.
Cream shortening and gradually add 1 1/2 cups sugar, continuing to
cream until light and fluffy.
Beat in eggs, beating well.
Add sifted dry ingredients alternately with milk,
beginning and ending with dry ingredients.
Blend well after each addition.
Cut cheese into 1/4-inch cubes and fold into batter,
along with walnuts and orange peel. Turn batter into 2 greased and
floured 9x5-inch loaf pans or 12 well-greased muffins tins.
Bake at 375 degrees 50 to 55 minutes for loaves or 20 to 25 minutes
for muffins, or until golden brown. Combine 1/3 cup sugar and orange juice.
Brush over hot loaves. Cool 30 minutes. Remove from pans.
Cool completely before slicing. Makes 2 loaves

   2      cups          Unsifted all-purpose flour
   1      teaspoon      Baking powder
     1/2  teaspoon      Baking soda
     1/4  teaspoon      Salt
   1      teaspoon      Ground cinnamon
     1/2  teaspoon      Freshly grated nutmeg
     1/4  teaspoon      Ground allspice
   2      cups          Chopped pitted dates
   8      tablespoons   Unsalted butter -- softened
     1/2  cup           Light brown sugar
   2                    Extra-large eggs
   1 1/2  teaspoons     Vanilla extract
     1/3  cup           Buttermilk
     3/4  cup           Chopped walnuts or pecans

Preheat the oven to 350F.  Butter and flour a 9x5x3-inch loaf pan.

Sift together the all-purpose flour, baking powder, baking soda, salt, .
cinnamon, nutmeg and allspice.  Place the dates in a bowl,
sprinkle them with 1 tablespoon of the sifted mixture and mix,
coating the dates as evenly as possible.
(The dates, if they are very soft, will clump together--
just stir the flour in and around, separating the nuggets as you go.)
Cream the butter in the large bowl of an electric mixer on moderate
speed for 3 minutes.
Add the sugar and beat on moderately high speed for 2 minutes.
Beat in the eggs, one at a time, blending well after each addition.
Beat in the vanilla extract.  On low speed, add half of the sifted ingredients,
the buttermilk, then the balance of the sifted ingredients,
mixing until the particles of flour are absorbed.
Stir in the dates and walnuts or pecans.

Pour and scrape the batter into the prepared pan.
Bake the cake for 1 hour, or until a wooden pick inserted into the cake
emerges clean and dry.
The baked cake will pull away slightly from the sides of the pan.

Cool the cake in the pan on a rack for 4 to 5 minutes,
invert onto another rack and turn rightside up.  Cool completely.
Store in an airtight container.

                       Eggnog-Cherry Nut Loaf Cake

   2 1/2  cups          All-purpose flour
     3/4  cup           Sugar
   1      tablespoon    Baking powder
   1      teaspoon      Salt
   1                    Egg -- beaten
   1 1/4  cups          Eggnog
     1/3  cup           Cooking oil
     1/2  cup           Walnuts or pecans -- chopped
     1/2  cup           Maraschino cherries -- chopped

In mixing bowl stir together flour, sugar, baking powder, and salt.
Mix egg, eggnog, and oil. Stir into dry ingredients, mixing well.
Fold in nuts and cherries. Turn into two greased 8x4" loaf pans
. Bake in 350~ oven 45-50 minutes or till done.
Cool in pans for ten minutes. Remove from pans an cool on rack.
Makes two loaves.

TO MAKE HOMEMADE EGGNOG:
Beat together 2 eggs, l cup light cream, 1/4 cup sugar, and 1/4 tspn ground nutmeg.

NOTE: You can also add mini-chocolate chips if desired.
This freezes well and can also be baked in mini-loaf pans also.

   1 2/3  Cups          Self-Rising Flour
   1      Teaspoon      Baking Powder
   1      Tablespoon    Brandy
                        Powdered Sugar

Grease a 9-1/4x5-1/4-inch loaf pan.  Preheat oven to 350 degrees.
In a large bowl, beat margarine, unflavored sugar and vanilla sugar until light and fluffy.
  Beat in eggs one at a time.  Add hazelnuts.
Sift flour and baking powder together.
Fold into mixture, combining thoroughly. Stir in brandy. 
Turn batter into greased loaf pan.
Bake 1 to 1-1/4 hours until wooden pick or skewer inserted in center
comes out clean.  Remove from pan; cool on rack.
Sift powdered sugar over cooled cake.

                        Rind (colored part only) of -- 2 lemons
   6      ounces        Unsalted butter -- softened
   3      ounces        Cream cheese -- softened
   2      large         Eggs
   8      ounces        Lemon yogurt
                        -----GLAZE-----
     1/2  cup           Confectioner's sugar
   5      teaspoons     Fresh lemon juice

1. Heat oven to 325 degrees. Grease an 8 1/2-by 4 1/2-inch loaf pan
and dust lightly with flour. Sift together flour, baking powder, ginger and salt; set aside.

2. Sprinkle several tablespoons of granulated sugar on a cutting board.
Add lemon rind and chop as fine as possible.
Transfer to a large mixer bowl and add remaining granulated sugar,
butter and cream cheese. Beat on high speed until light and fluffy, 3 minutes.
Add eggs, one at a time, mixing well after each addition.
Add yogurt and mix well. Stop the mixer and add dry ingredients. Mix just until combined.

3. Transfer batter to prepared pan.
Bake until a toothpick inserted in the center comes out clean, 60 to 70 minutes.
Cool in pan for 5 minutes then invert onto a wire rack.

4. Make glaze by mixing confectioner's sugar and enough lemon
juice to make a glaze. Pour over warm cake.

Sift into mixing bowl flour, sugar, baking powder and salt. 
Add raisins and nuts.  Combine egg, vanilla and butter; add to mixture.
Dissolve soda in pineapple with juice; add to batter, mixing thoroughly.
  Pour into greased and lightly floured large loaf pan.
Bake at 350 degrees for 1 hour, or until done.
  Remove from baking pan; cool on rack.

     1. Grease bottom and sides of 9 x 5 x 3-inch loaf pan. Set oven to 350 degrees.
     2. Combine flour with soda, salt and pumpkin pie spice.
     3. Cream margarine in large mixing bowl. Gradually add sugar and cream at
high speed of mixer until light and fluffy. Blend in eggs; beat well.
     4. Turn mixer to low speed and add dry ingredients, alternating with pumpkin.
Begin and end with dry ingredients; blend well after each addition.
     5. Stir in chocolate morsels and 1/2 cup finely chopped walnuts.
     6. Pour into prepared pan and sprinkle with remaining walnuts.
     Bake for 65-75 minutes or until cake springs back when lightly touched in center.
Cool, then glaze with spice glaze.

SPICE GLAZE:
     Combine 1/2 cup powdered sugar,
1/8 teaspoon nutmeg and 1/8 teaspoon cinnamon
. Blend in 1-2 tablespoons light cream until the consistency desired;
should be thin.

Add the flour alternately with the milk to the butter mix
, beating until smooth and well combined.
Stir in the flavorings and orange rind. Fold in the pecans.

Bake at 375~ for about 50 minutes or until tested done.
Cool slightly before removing from pan.

   1      teaspoon      Cinnamon -- ground
   1      teaspoon      Baking soda
     1/4  teaspoon      Baking powder
   3      tablespoons   Orange zest -- finely grated
   1 3/4  cups          Walnut pieces

Squeeze all excess moisture from the spinach and set aside..
Beat the eggs with both sugars on high speed until fluffy.In a steady
stream slowly add the oil and then the vanilla while the mixture is continuously beaten..
Meanwhile,sift the flour with the salt,cinnamon,baking soda,and baking powder
.Mix in the orange zest.Beat the dry ingredients alternately
with the spinach into the batter.Add the walnuts with last
addition of the dry ingredients..
Divide the mixture between 2 greased and floured loaf pans,measuring
9"x 5"x3".Bake in a 325 deg.preheated oven for 1 hour and 15 minutes
or until a tester placed into the center of each cake comes out clean.
.Unmold while still warm and cool completely on a wire rack.
.Makes two cakes enough for 14 to 16 servings...

   1      teaspoon      Baking soda
     1/2  teaspoon      Salt
   1      teaspoon      Cinnamon
   2      cups          Sugar
                        Eggs -- beaten
   1      cup           Oil
  10      ounces        Frozen strawberries -- thawed
   2      pounds        Confectioners' sugar

Combine flour, soda, salt, cinnamon and sugar; mix together well.
In another bowl, combine eggs, oil and (sliced) strawberries.
Add to the dry ingredients and mix well. Pour into 2 greased 9x5" loaf pans.
Bake in pre-heated 350 degree oven for about 1 hour.
Leave in pan to cool. When almost cool, turn onto wire rack
and dust top with confectioners' sugar.
These freeze well and are very moist when thawed
. If you freeze them, don't dust with confectioners' sugar until thawed

   2 3/4  cups          Cake flour -- sifted
   2 3/4  teaspoons     Baking powder
     1/2  teaspoon      Salt
     3/4  cup           Butter
   1 1/4  cups          Sugar
   8                    Egg yolks
     3/4  cup           Milk
     1/2  teaspoon      Lemon extract

Sift flour onnce, then measure, add baking powder and salt, and sift together
three times.
Cream butter thoroughly, add sugar gradually, and cream together
until light and fluffy.
Beat egg yolks very thoroughly with rotary egg beater until light
colored and thick enough to fall from beater in heavy continuous stream.
Add to creamed mixture and beat until very smooth, almost waxy in appearance.
Add flour, alternately with milk, a small amount at a time,
beating very thoroughly after each addition.
When all flour is added, beat thoroughly again. A
dd lemon extract. Bake in greased pan, 13x9", in moderate oven (350~) 45 minutes.

Spread Orange Butter Frosting (see Recipe) on top and sides of cake.
Note: This cake requires especially thorough beating of egg yolks and
cake mixture throughout the mixing process to make it very fine grained and light
