Culinary Gems from the Emerald Isle
green beer leprechaun hat st saint patrick patrick's day st patties day st pattie's day Irish cuisine offers us so many good things to eat, it's a shame to wait until St. Patrick's Day to sample them all. Dig into bushels of fresh seafood like salmon, haddock and scallops; soft, dense wedges of soda bread; rich lamb stew studded with fortifying root vegetables and savory bacon; tangy artisanal cheeses; thick stout beers and loamy, well-aged whiskeys; cakes and pies made from robust, tart apples... Are you hungry yet? Then throw another piece of turf on the fire and hunker down with our recipes and hints to plan your St. Patrick's Day festivities.

Prolong the Corned Beef Feast
In many parts of the world (though, oddly, not in Ireland) a corned beef feast is the thing to serve for St. Patrick's Day. Take advantage of the fact that corned beef will be on sale this month and stock up! Cook a few slabs of it at once, then slice or dice the meat, wrap it securely and tuck it into the freezer for the next time you've got a hankering for a Reuben sandwich or corned beef hash, or your soup or casserole needs a little perking up. Cooked corned beef will keep in the freezer for three months.

Fish for your Supper
Want to try something besides corned beef this year? Irish salmon, whose season actually opens on March 17th, is famous the world over. No complicated preparations are needed for this fresh, flavorful fish. And what else are they going to be devouring in the pubs and on the streets in Ireland? Fish and chips! Any white fish, like cod or haddock, will work. For perfect fried fish, dip it in thick beer batter and make sure the oil is hot enough before you begin! Serve simply with salt and malt vinegar.

Real Irish Coffee
Irish coffee was invented in the 1940's at an Irish port to give a little warmth and cheer to exhausted travelers in the middle of their long transatlantic journeys. To make a proper Irish coffee, start by warming up a stemmed glass with a swirl of hot water. Dump out the water and pour in a shot of Irish whiskey. Fill the glass 3/4 full with strong coffee and stir in a tablespoon of brown sugar. Next, whip some fresh cream just a little bit so that it's fluffy but still pourable. Slowly pour the whipped cream over the back of a spoon into the coffee, so that the cream remains floating on top. Don't stir! Serve the drink immediately so that everyone can enjoy the sensation of sipping the hot, sweet bite of the spiked coffee through the layer of cool, fluffy cream.

Whether you're Irish all the way or just Irish for a day, raise your glass and fill your plate with these irresistible specialties from the Emerald Isle.

GREEN WITH ENVY (ST. PATRICK'S DAY GAME)
By: Jackie Whiteker of Partylite

Revised by me

St. Patrick's Day Game & Ice Breaker - Good for repeat guests.
(on the invitations I wrote to be sure and wear green to the party!)

For this game, you'll need to have about 5 (or whatever you think you'll need) gifts packaged up in little bags (stuff the bags with green easter grass and hide  the gift inside the grass). I'm going to use the bags I bought from Express Yourself. I'll put paring knives in a few bags, mini whisk in some, coupons in others for $1.00 off their order for that night, etc. Keep it simple. One bag will have a little green clover sticker on it and one will have a green X.

O.k., since it is St. Patricks Day, anyone wearing green gets a free gift from me!

[Pass a gift out to each person who wears green. Instruct them NOT to open them! Hopefully someone won't wear green, but if they all do, that's o.k. too. If no one wears green, then I'll just pass out gifts to every other person].

Now, we're going to play a game called "Green With Envy"!

I'm going to read some questions, which all contain the word green or some form of green in it, and the first person to shout out the right answer gets to steal any one of the gifts she chooses from another person.

After all, aren't we all just a little bit envious of anyone who has a PC item we don't?

Now I'm only going to read so many questions, so listen up!

But first, look at the outside of your bags to see if you have one with a green X on it, or a green clover.

When I finish, whoever is holding the gift with the green clover
on it will get a free gift of her choice under $       .00 if she books a party from [hostess] tonight.

The person who ends up with the package that has a green X on it will have the opportunity to buy a $        .00  (Name of item) of her choice for 1/2 price if she books a party to be held within 30 days of today!

Otherwise, the prize for this game is whatever you're holding when I'm finished with my questions!

[If there are any guests present who have never been to a PC party before, I'm going to have some questions to throw in here and there that have to do with St. Patricks Day. This way, everyone has a fair chance to play].

O.k. here we go!!!

1. I'm looking for the name of any Kitchen Gadget that is green that PC sells!

Sea Green Towels, Tattersall towels, scraper

After they steal their gift, I'll summarize quickly ?PC has over          products in our newest catalog.           % are under $10.00!

2. What is the average PC show?

$500.00.  On average, a PC show is around $500.00, which is            % in my pocket!!!

3. (Throw in - if needed) What is the most recognized green symbol used on St. Patricks Day?

Green clover

4. This item is on page             of the catalog. The item is (give description of item, buit not enough to give it away!)

5. How much does the Average Host get in free product?

            $90.00 in Free Products

6. If you have a PC show in your home, and your party sales total 400 in green paper, how much PC merchandise will you receive for free!

$60.00 free!

Now give talk about PC Hostess Gift Program

7. (Throw in - if needed) Why do we wear green on St. Patricks Day?

So we don't get pinched!

8. If you decide to become a PC consultant like me, how much will your kit cost you in green paper to get started?

$90.00!!! or you can buy it for as little as $50.00!

Talk briefly about benefits of being a consultant.

9. (Throw in - if needed) These little guys wear green and are usually
associated with St. Patricks Day. What are they called?

Leprachauns

10. How many Half Price Items can you earn as a host and save yourselves some money?

4

11. And last but not least....here is your final chance to steal -
What is the name of this green game?

Green With Envy!

O.k. everybody, who has the gift with the green clover? Congratulations!

Now you get to choose your kitchen product, which is                      (you set your own prize depending on how much you want the booking) for free if you book a show and
it will arrive when your order for this your party comes!

Who has the gift with the green X on it? Alright! So would you like to book a party tonight?  (hopefully she says YES!) Great, then you can pick out which kitchen product you would like (again you pick depending on how many booking you want and how badly you want them) you want and buy if for half price! I will deliver it to you the day/night that you have your party!!   (If the party is going to be too soon to get it ordered, you could say that it will be delivered with the rest of her show order)

We'll book a date after my demonstration tonight!

Everyone else - open up your bags to see what you got!

"My two girls love shaping these three-leaf clovers out of refrigerator dough and sprinkling them with green sugar. It's a quick 'snacktivity' and easy enough to bring to the classroom either as a project or just a treat. Serve with a glass of green milk (a drop of food coloring does the trick).

Give each child a piece of foil to work on (clean hands, please!), then transfer the foil to the cookie sheet. Encourage four-leaf clovers too.

Happy St. Patrick's Day!
shamrock
Celebrate St. Patrick's Day this year with a fine Irish feast. Americans will be eating corned beef and drinking green beer by the pint, while in Ireland, the holiday is much more subdued. People will be enjoying a quiet morning at church followed by a few stout beers at the pub. For those of you who are only Irish for the day, we have lots of great articles about St. Patrick's Day as well as more recipes than you can shake a shillelagh at!

Rave Review!
I love Corned Beef and Cabbage and I must have used close to a hundred recipes, but I think this is the simplest and the best. Use the white (not russet) potatoes. I sometimes wondered why my previous renditions sometimes came out on the salty side--this recipe is well-balanced in flavor. Now I know that a '10 to 5' potatoes to carrot ratio really works...if you skimp on the veggies, the dish will be salty. Using 10 potatoes and 5 carrots gives it a good seasoning balance.

Feed Me, I'm Irish!
Eating and drinking are a large part of most St. Patrick's Day celebrations. Here are a few of the classics:

Corned Beef. The first corned beef was packed in salt, and sometimes spices, in order to cure it. It got its name from the corn kernel-sized grains of salt it was packed in. Today, corned beef is usually made by soaking a brisket roast in a brine of water, salt, and spices. Since brisket roast is a tough cut of beef, it is usually boiled or braised until tender enough to pull apart with a fork. Let your corned beef simmer in a slow cooker while you go to your local St. Paddy's Day parade and come in from the cold to the delicious aroma of a hot meal.

Irish Cuisine. For the Irish, the day starts off with a big fry-up consisting of fried eggs, fried soda bread or potato farls, sausage and bacon served with a cup of breakfast tea. Irish Salmon season is also beginning about this time so fresh salmon is certain to appear on many menus. Beef or lamb stew with champ or colcannon will also make a fine meal for St. Patrick’s Day. Although corned beef is seldom served in the home, you will find it in many Irish restaurants on this day due to demand from tourists.

Drinks. Many people will forego the cuisine altogether and simply focus on drinking. Although green beer is great fun as well as a staple in the U.S., the true Irish will be drinking stout Irish beer such as Guinness® and fine aged Irish whiskey such as Bushmill's® as well as lighter drinks like lagers and ales. Can't decide? Have a Boilermaker: Stout beer with a shot of whiskey or Irish creme dropped into the glass. Don't forget to toast to your health ?Slainte!

St. Patrick's Day Cupcake
It's not far to the gold at the end of this rainbow-topped Emerald Isle cupcake, just the thing for your lads and lasses on St. Patrick's Day.

/Resources/Cakes/recipes/special/0303_golden_arches.jpg
?A cooled cupcake
?Grass-green frosting
?Several flavors of Airheads candies
?A pot's worth of gold coins
Step 1:
To make one, first top a cooled cupcake (baked from your favorite recipe) with grass-green frosting.
Step 2
Step 2:
For the rainbow, use a large, heavy knife (parents only) to cut a long, narrow strip from each of several flavors of Airheads candies (this is sticky stuff, so work on waxed paper). Lay the strips side by side, press them together, then cut the ribbon of strips in half to make two rainbows.
Step 3:
Curve each one into an arch and trim the ends as shown. Set one rainbow upright on the cupcake (save the other for another cupcake) and deposit a pot's worth of gold coins at one end. If necessary, place a gold coin behind the rainbow for support.
