Fiesta Chili

Ingredients and Instructions:

1 lb. ground beef
1 tbsp. oil
½ c. chopped onions
½ c. chopped celery
½ c. chopped mushrooms
½ c. green pepper
1 can kidney beans for chili
2 cans Campbell's Fiesta Tomato soup
salt & pepper to taste
chili powder to taste

Brown onions, celery, mushrooms and peppers in oil. Add ground beef and cook thoroughly. Drain and place in pot (I use a slow cooker). Add soup, kidney beans, salt, pepper and chili powder. Heat and serve. The secret to this recipe is the Campbells Fiesta Tomato. It has the right spice mix for almost everyone.

Chiles Rellenos Casserole

3 large poblano peppers
1 cup shredded Monterrey Jack cheese with jalapeno peppers (4 ozs.)
3 beaten eggs
1/4 cup milk
1/3 cup all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon ground red pepper
1/8 teaspoon salt
3/4 cup grated Cheddar cheese (3 ozs.)
Picante Sauce
Sour cream

Quarter the peppers and remove stems, seeds and veins.

Immerse peppers into boiling water for 3 minutes. Drain.

Invert on paper towels to drain well.

Place half the peppers in a well greased 1-1/2 quart casserole.

Top with half of the shredded Monterrey Jack cheese.

Repeat layers.

In a medium mixing bowl combine eggs and milk.

Add flour, baking powder, red pepper and salt. Beat until smooth.

Pour egg mixture over peppers. Bake, uncovered, in a 450 degree oven for 15 minutes or until set.

Sprinkle with the shredded Cheddar cheese.

Let stand about 5 minutes or until cheese melts.

Serve with picante sauce and sour cream.

This casserole recipes makes 4 main dish servings.

This dish can be doubled or tripled easily.

It is much quicker and easier than making individual rellenos.

Tuna Noodle Casserole

  • 6 ounces medium noodles
  • 1-7ounce can of tuna, drained
  • 1/2 cup mayonnaise
  • 1 cup celery, chopped
  • 1/3 cup onion, chopped
  • 1/4 cup greep pepper chopped
  • 1/4 cup pimiento canned, chopped
  • 1 -10 ounce can condenced cream of celery soup
  • 1/2 cup milk
  • 1 cup chedder cheese, shredded
  • 1/2 cup slivered almonds, toasted

Directions:

-cook noodles as directed on package, combine tuna, mayonnaise, celery, onion, green pepper, and pimiento.
-heat soup and milk; adding the cheese until it is melted.
-combine the soup mixture to the noodles turn into 2-quart casserole dish, sprinkle with toasted almonds.
-bake uncovered for 20 minutes at

 Cowboy Casserole (Crockpot)

Ingredients and Instructions:

  • 1 onion, chopped
  • 1 1/2 pounds ground chuck, browned, drained
  • 6 medium potatoes, sliced
  • 1 can red beans
  • 1 can tomatoes, mixed with
  • 2 tablespoons flour
  • Salt, to taste
  • Freshly-ground black pepper, to taste
  • Garlic powder, to taste
Put chopped onion in the bottom of the crockpot; layer with browned ground beef, sliced potatoes, and beans. Spread tomatoes or soup over all. Sprinkle with seasonings as desired. Cover and cook on LOW for 7 to 9 hours.

This recipe yields 4 to 6 servings.

Comments: One can of condensed tomato soup may be used in place of the tomato-flour mixture.

Stir in the flour, pepper, thyme, marjoram and salt and cook over a low heat for one minute.

Slowly add the milk, stirring constantly until smooth and thick. Remove from heat.

Add the cheese and sherry and stir until the cheese is melted.

Add the beans, mix well and pour into a shallow casserole dish.

Bake, uncovered, in a 400 deg. F. oven for 1/2 hour.

This green bean casserole recipe will serve 6.

Green Bean Casserole Recipes

  • 3 to 4 cups cooked cut green beans (fresh, frozen, or canned, drained)
  • 2 tablespoons butter, melted
  • 1 1/2 cups milk
  • 1 pkg. cream of leek dry soup mix (amount for 3 or 4 servings)
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon prepared mustard
  • 1/2 cup sliced ripe olives (2 1/4 ounce can), drained
  • 1 can (3 1/2 ounce) fried onion rings or 1 cup coarsely crushed potato chips
Place the cooked, drained, green beans into a greased 1 1/2 quart casserole. Blend with melted butter the milk, dry soup mix, Worcestershire sauce, mustard, and olives. Pour over the beans in the casserole dish. Sprinkle the fried onion rings or potatoe chips over the top.

Bake at 350 deg. F. for 15 to 20 minutes or until hot and bubbly.

This green bean casserole recipe makes about 6 servings.

Green Beans Au Gratin

  • 1 1/2 pounds green beans
  • 3/4 cup milk
  • 3 tablespoons butter
  • 3/4 cup grated cheese
  • salt
  • 1/4 teaspoon paprika
  • 1/8 teaspoon cayenne
  • bread crumbs
  • butter
Chop the beans finely and mix the milk, butter, 1/2 cup cheese and seasonings.

Pour into a buttered casserole dish and bake in a 350 deg. F. oven for one hour. Stir occasionally.

Ten minutes before the end of the cooking time, sprinkle with the remaining cheese and bread crumbs. Dot with butter and bake until golden brown.

This green bean casserole recipe will serve 6.

INGREDIENTS

  • 1/2 pound sliced bacon, diced
  • 1/2 pound ground beef
  • 1 cup chopped onion
  • 1 (28 ounce) can pork and beans
  • 1 (17 ounce) can lima beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1/2 cup barbecue sauce
  • 1/2 cup ketchup
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 tablespoons prepared mustard
  • 2 tablespoons molasses
  • 1 teaspoon salt
  • 1/2 teaspoon chili powder

DIRECTIONS

  1. In a large skillet, cook bacon, beef and onion until meat is browned and onion is tender; drain. Transfer to a greased 2-1/2-qt. baking dish; add all of the beans and mix well. In a small bowl, combine the remaining ingredients; stir into beef and bean mixture. Cover and bake at 350 degrees F for 45 minutes. Uncover; bake 15 minutes longer.

Hearty Bean Casserole:
 
 

INGREDIENTS

  • 2 (15 ounce) cans pork and beans
  • 1 (16 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can lima or butter beans, rinsed and drained
  • 1 medium onion, chopped
  • 1/2 cup packed brown sugar
  • 1/2 cup ketchup
  • 4 bacon strips, cooked and crumbled

DIRECTIONSIn a large bowl, combine the beans, onion, brown sugar and ketchup. Transfer to a greased 2-1/2-qt. baking dish. Sprinkle with bacon. Cover and bake at 350 degrees F for 1 hour. Uncover; bake 30 minutes longer.
