We just had a Halloween party last night and I made this again - it's always a hit so I thought I would post. I guess it's pretty common where I live, but I'm not sure about elsewhere so I'm posting.
Take 2 regular size cans of refried beans and mix with 1 packet of taco seasoning mix. Spread this in the bottom of a 9 x 13" pan or platter of similar size. If you don't have canned refried beans, just cook up a couple cups of pinto beans very soft and mash them with a little olive oil.
Next, spread with 1 small jar of chunky salsa - here's where you can adjust the "heat" according to taste. I usually just go mild, since not everyone is like me and loves spicey food.
Then, take a large container of sour cream and sort of dollop it all over the salsa and carefully spread so it doesn't mix too much - doesn't have to be perfect.
Last, use 1 can of Rotel (diced tomatos and chilies) drained, and sprinkle over the top. You can substitute fresh tomatos with or without a bit of jalapeno or green chilies too. Or chopped lettuce and tomato - it's all good.
Serve it up with 2 bags of tortilla chips. This pan will serve about 20 or so people - mmmmm!
