Okay, you asked for it....lol. This is the recipe for the fish chowder that my Sister and I made. I hope it makes sense as I wrote it exactly how we did it.
Fish Chowder
Main Ingredients
Fish (your choice of type)(we used about 6 small frozen fillets for 4 people)
Shrimp (we just used a frozen shrimp ring and pulled off the hard tips)
Scallops
Onions
Potatoes (we used about 8 medium sized potatoes)
You can use any amounts of the above depending on how you want it to taste.
Sauce Ingredients
2 Tbsp. Melted Butter
5 Tbsp. Flour
Milk
Salt and Pepper
Directions
<DIR> Spray the bottom of the pot you are going to use to make the chowder with Pam (or any other cooking spray or even butter if you wish).
Brown the onions.
Peel and quarter the potatoes and place in pot with onions.
Add water and salt (if you use salt to boil potatoes) and boil until potatoes are tender.
While the potatoes are boiling, mix the butter and flour together and add a little milk until it forms a paste.
Add more milk (approx. 1 ½ to 2 cups depending on how much you are making) and blend with whisk until smooth.
Place in microwave oven and heat on high. Take out every couple of minutes and whisk again until sauce is thick (almost the consistency of cooked pudding. Sauce will thin out later when added to chowder).
When potatoes are done, do not drain.
Add the fish, scallops and shrimp to the onions and potatoes.
Add the sauce in stirring as you pour.
The fish will basically cook itself so there is no need for further cooking.
Place ¼ to ½ cup of butter on top and sprinkle with salt and pepper.
Place lid on pot and let sit for a bit until butter starts to melt. If you are eating right away let butter melt completely and stir. Otherwise, you can just reheat it quickly and the butter will melt.
