Hello,
 
I have found two recipe books that I feel are outstanding and that is saying a lot for me! I have not cooked anything twice out of either of them. Not because the recipes weren't good, but because they were so good I wanted to try the other recipes in the books.
 
I kept seeing the name "Saving Dinner" popping up in a lot of areas in my life. So I went to the local interlibrary loan to see if it was there. It wasn't but "Saving Dinner the Low-Carb Way" was, so I got it. WOW !!! Talk about eating healthy!!!
 
So I went to Barnes and Noble and bought the book "Saving Dinner" as I was copying recipes out of the other one. Needless to say, I ended up buying that one also.
 
We have never eaten so much fish or chicken as RB is a beef eater. But the recipes in these two books have opened up a whole new world of eating for us. Of course, there are beef and pork recipes and some veggie recipes too, but I am very, very impressed with the poultry and fish recipes....
 
I hope you can get your hands on one or both of these books, because I feel you will be as happy with them as I am.

hey!   i'm wondering how elaborate the recipes are?  i love to try new things, but don't have a lot of time for preparation or funding to get all the ingredients some things call for...

Due to the fact that I can't stand long because of degenerative arthritis in my lower back, I need recipes that don't require a lot of preparation time. These I found great.
 
Some you make a really quick marinade and then just cook them. Others are made in one pan. I have found that I can have supper on the table in less than 30 minutes.
 
As for ingredients, I only had to go out and buy thyme, rosemary and basil, as I didn't usually use them. Now I use them all the time. I have started making menus and knowing in advance what I need.
 
I also like these books because they are set up as menus on a weekly basis with all the ingredients required for that week.
 
If I can remember, later tonight I will post a couple of recipes here under this thread if you wish.

thank you so much for taking the time to post some of the recipes...the pork chops sound yummy!  i was surprised to see i have all the stuff to make it but the peppers and vinegar.  i'd like to look into getting myself copies of these books...what are they?  ~lavony~

The books are by Leanne Ely and they are called, "Saving Dinner" and "Saving Dinner the Lo-Carb Way". I got mine at Barnes and Noble so I bet you could get it on the net or at another bookstore. I got mine there for my 10% discount.
 
Hope you can find them and purchase them, because I think you will use them a lot. I have 100's of cookbooks and loose recipes and these two books I have used more than all of the others, I think. And I am 55 hahaha...
